Here is a one pot recipe I have that the kiddos love.

I'm wondering if any of you have any ideas on how to make it healthier? Before they added 2 T of butter, 1 cup full fat sour cream and cooked the noodles separately. I've added the mixed veggies, green pepper, taken out the other things that were fattier.

Crockpot Chicken/Turkey Pasta

2 C shredded/diced cooked leftover chicken turkey
Can condensed cream of mushroom soup
1 C light sour cream
1 onion chopped
1 green pepper chopped
2 C skim milk

I cook that for a little under 3 hours on high. It will be rather "soupy" at that point. Then, I add:

1 1/2 cups mixed vegetables (I usually have extra precooked)
4 cups egg noodles.

I serve topped with grated parmasean cheese.

I don't feel like I'm really going "whole foods" so much with using the cream of mushroom soup.

Any suggestions on making this healthier?

You could do yogurt instead of sour cream and you could make your own cream of mushroom soup, there is a recipe for it on hillbillyhousewife.com . Use whole wheat egg noodles.

I checked out that website...I didn't see a recipe for cream of mushroom. Maybe she took it off the website?

I've been making this recipe about once a month. It's really good with turkey I've found. And, it's sort of meandered it's way from turkey tetrazinni to that.
