I have a part time job that I do in the evening so I'm thinking its time to start using the crockpot again.

We live in an apartment now and have very little room for bulk shopping so that is also changing the way I shop.

I need to be quite frugal.

What are your favorite crockpot meals that are frugal and healthy?

Mom of a 7 yr old, 4 yr old, and 1 yr old. Wow. How did that happen?

red beans and rice.

For us, 1 lb of dry kidney beans is 72c, 1 small bag of brown rice is $1.45. It lasts the 4 of us at least 3 days. Good with sausage but I'd leave it out to be frugal. Also could use white rice to save more money. The beans get cooked in the crock pot then the rice gets cooked seperately in the rice cooker (or could do it on stove).

Or cook 1 lb dry pinto beans in crock pot (54c) and serve with homemade biscuits (5 lb of whole wheat flour $2.25 for the bag, or biscuit mix is $1.75 at our dollar store, and you'll have some leftover), or serve with cornbread, I've seen a little baggie of cornbread mix as low as 33c.

Or cook any kind of meat in the crock pot with a little salsa and just wrap it up in a tortilla.
