I've been working on planning our meals a whole month in advance. If I do it this way, I can go ahead and order/freeze the meats we will need from the butcher and can keep costs down. I also know from experience that it may change a bit as the month progresses due to schedule changes, etc. But this gives me a framework and that's oh so useful!

Notes: Tuesdays, DD has pottery class for three hours in the afternoon so she needs to eat a lot that day, before and after class cuz she won't be home to do her usual snacking.

Thursdays are typically Date Night for DH and I. DD and sitter have choice of eating leftovers, going for pizza down the street or sitter can always make pasta with jarred sauce I keep for such occasions.

Fridays are Movie Night in our family. We make a meal DD chooses or I choose, knowing she'll eat. She has given me the ideas for this month.

Also, dd snacks all through the day but I don't plan those. She just eats a bit of meat, some beans, some frozen peas, leftovers...anything she has a hankering for.

1st MON
b-fried egg whites, toast or any banana muffin leftovers, oj
l-tuna on baguette, green bean salad
d-artichoke omelets with spicy salsa (fried eggs for Soph)

2nd TUES
b-apple/cottage cheese pancakes, chai for me
l-BLT on baguette
d-chicken fingers, corn on cob, baked beans (I always cook extra chicken in the oven while I make the "fingers")

3rd WED
b-muffins, bacon and sliced fruit
l-chicken salad with leftover chicken, baguette
d-sweet'n'sour pork meatballs, asian-style slaw, noodles

4th THUR
b-muffins, hard-boiled egg
l-eggrolls, leftover meatballs, pineapple and almond "salad"
d-DATE NIGHT

5th FRI
b-cereal
l-corn chowder, oven-baked cheese blintzes (leftover chicken fingers, etc for dd)
c-chicken divan (without sauce for dd)

6th SAT
b-Daddy's pancakes, fruit salad
l-any leftovers from meals before FRI
d-ratatouille, cuban rice and beans

7th SUN
b-fruit salad, cottage cheese, toast
l-divan leftovers
d-penne bolognese, salad, garlic bread

8th MON
b-oatmeal bars, tea, oj
l-ratatouille and rice/bean leftovers
d-bolognese leftovers, broccoli

9th TUES
b-oatmeal bars, kiwi over cottage cheese
l-tuna, red onion relish, baguette
d-Italian pot roast, mashed potatoes, gravy, salad, gougeres




10th WED
b-biscuits and gravy
l-brown lentil soup (freeze 1/2 for later), gougeres
d-curried stir fry with leftover roast bits

11th THUR
b-biscuits and gravy, orange slices
l-Greek chickpea salad, turkey rolled with cream cheese, leftover roast with plain chickpeas for dd
d-DATE NIGHT (will encourage sitter and dd to eat roast leftovers...if not, will change menu to incorporate leftovers)

12th FRI
b-corn fritters, berries and cream
l-sesame udon with spinach, fried tofu
d-lamb chops, orzo, Greek salad for me and dh
dessert-apple cake

13th SAT
b-apple cake, chai, fruit salad
l-leftovers
d-broccoli cheese pie for me and dh, leftover lamb and orzo for dd

14th SUN
b-baked apples with raisins, cream cheese on toast
l-leftovers from meals before SAT (clean out fridge)
d-curried red lentil vegetable soup, cheese biscuits

15th MON
b-apple cheddar bread, hardboiled egg
l-leftover broccoli/cheese pie and lentil soup
d-lamb meatballs, egg noodles, salad, zucchini

16th TUES

Anyone else want to post their menus? I love reading what other people eat! Makes me hungry but I get good ideas

well, this is an experiment. I am trying to remember, also, that something may come up where we need to switch around some meals. Or we may not have as many leftovers or even more leftovers than expected. And all that changes the menu.

ok. here's mine. I did 4 weeks and there's no particular order. So we might eat "Monday's" meal on Thursday - and Sat & Sun are actually days that C has off.

oh and c works nights, so dinners are leftovers. Our main meal is our lunch. Dinner is stew, etc that can be packaged easily. And I'm making huge pots of food and freezing bits to eat at other times in the month. so I'm only making apple cranberry couscous in week 1 and eating it the rest of the month.

Week 1

I'm actually doing an experiment of my on in October. I've been too busy to do the meal plan this month so I'm leaving it up to DH. Maybe it will work, or maybe we'll run out of food after the first 2 weeks, I'm not sure. Fingers crossed.

We keep a well stocked pantry and I bought a lot of meat on sale (6 whole chickens, 10# of beef roast, and a rack of ribs for $30) That would be more than enough for me to plan for the month, but I'm not sure about DH.

I envision lots of quesadillas, baked chicken and mashed potatoes, chicken wraps, roast beef sandwiches, beef stew, maybe chicken curry, maybe stir fry chicken, and chicken tetrazzini. And we keep well stocked with lots of dried beans, so maybe some vegitarian chili, vegitarian refried bean burritos, and black bean soup.

The orange chicken (a crockpot recipe) is at home, but I have the pumpkin bread one here at work:

Pumpkin Bread

3 1/2 c all purpose flour
2tsp baking soda
1 1/2 tsp salt
2tsp cinnamon
2 tsp nutmeg
3 c sugar
4 eggs beaten
16 oz canned pumpkin (you can use fresh pumpkin too)
2/3 c water
1 c vegetable oil

Preheat oven to 350* F. Combine first six ingredients. Add remaining ingredients. Place in loaf pan. Bake for 1 hour. Wrap in plastic wrap and refrigerate for at least an hour before eating. (This helps keep it moist.)

I'll post the orange chicken one tonight.

wife&mommy - I can't for the life of me find the orange chicken recipe, and I need it so I can cook it tomorrow! I'm going to do some more digging tonight, and I'll post it if I find it!

Thanks! I made the pumpkin one today and its good! It made SO much though. I made one big loaf, 15 muffins, and 12 mini muffins with it. So I fed the freezer with 1/2 a loaf and all the regular sized muffins. Now I need to make some cream cheese icing. mmmm

Oh gosh, thanks for letting me know! I got this recipe from a friend and had no idea it makes that much. I'll have to get a second loaf pan before I make it next week!

Still haven't found the orange chicken recipe, so my plans for tonight were derailed. We're having cheesy baked chicken & rice instead.

Sorry I just saw this.

Barbie Cups are canned biscuits, pressed into muffin tins and then put sloppy joes inside them. Does that make sense? After you add the meat put them in the oven till the biscuits begin to brown. My mom used to make these. They work good for busy nights.
