Well here is what we have planned.

M - Sausage & Shells Pasta Stroganoff
T - Zucchini Orzo (and I don't know what else with it yet)
W - Lasagna, Salad, Wheat Roll (freeze extra lasagna)
T - Pot Roast, Carrots, Potatoes in the crockpot, peas
F - Beef Stew w/ Grilled Cheese
S - BBQ Beef Sandwiches (not sure on the side yet, probably salad)
S - Nachos (for football!)

For breakfasts we are having blueberry pancakes, and homemade egg "mc"muffins. Probably oatmeal on a couple days as well. Our lunches will be leftovers.

Here is mine. The only thing is that tonight's dinner didn't leave enough leftovers, so I'm not sure what will happen tomorrow night after all.

sunday morning - quesadillas, scrambled eggs

sunday - lentils with (extra) spinach ginger and yogurt, new potatoes (steamed, topped off with butter and parsley)

monday - leftovers with roast tomatoes, vegetable stock in the crockpot

tuesday morning - quinoa breakfast cereal

tuesday - squash soup, cornbread, salad

wednesday - salmon with linguine, salad

T- sloppy joes with home made fries and peas
W-veggie soup with rice, and homemade rolls
T- mini meatloaf with honey carrots
F-lasagna with salad
S-homemade chicken fingers with squash and zucs
S-homemade mac n cheese, green beans and home baked cookies for dessert

Monday - out for my brother's bday
Tuesday - dorito chicken casserole, breadsticks, salad
Wednesday - salmon cakes, pasta, stir fried veggies
Thursday - dinner at my dad's
Friday - grilled chorizos, coleslaw
Saturday - grilled salmon, roasted potatoes, pasta, and steamed brocoli
Sunday - hot wings, celery - chicken nuggets for the kids

Sat--cheese fries :
Sun--sausage jambalaya, salad, fried okra
Mon--chicken pot pie
Tues--black eyed pea, mustard, and sausage soup, cornbread
Wed-spaghetti, salad
Thurs--cowgirl beans, brown rice, chard, corn on the cob

I start my menus on Friday, so that'll start a new week.

I'm new to this, hope it's ok to jump in! I'm single and don't have kids, so this is just for me.. (f) next to the meal means it's coming from the freezer, I'll track freezer stuff at the bottom of this. I think this'll be a great way for me to track my plan. I'm also going to add a list of what I need to buy for this plan at the end so I know how much I'm spending for the week, hope that's ok

Monday: Lunch - scrambled eggs w/cheese and a muffin. Dinner - bean tacos with roasted tomatoes and cheese. Snack: Plum

Tuesday: Lunch - hummus and peanut butter with carrots and cucumber (freeze extra garbanzos), yogurt and berries, muffin. Dinner: Butternut squash, white bean, and cauliflower soup with cornbread and roasted vegetables (green beans, broccoli, garlic, grape tomatoes). Snack: Plum or banana

Wednesday: Lunch - chicken fajitas (f). Dinner - veggie chili with cornbread. Snack: Yogurt and berries

Thursday: Lunch - hummus and peanut butter with carrots and cucumber, yogurt and berries, muffin. Dinner - Black bean soup (f) with cornbread. Snack: Apple/banana

Friday: Lunch - Black bean soup with cornbread (f). Dinner - Lentils and spinach over brown rice (and freeze extra cooked lentils). Snack: Apple/banana

Saturday: Lunch/Dinner - variations on lentils and spinach w rice (add cheese, tomatoes, in tortillas, etc.) Snack: Whatever's left.

Sunday: Lunch - Sushi salad (sushi rice with nori and whatever vegetables are lying around leftover). Dinner - Black beans and something (in tortillas, on rice, etc. - cook a bunch and freeze). Snack: Whatever's left.

To buy: 1 red bell pepper, 1 green bell pepper, celery, 1 can brown beans, diced tomatoes?, eggs, 1 container yogurt, apples, bananas. Approx. grocery budget: $20.

Out of freezer: 3 fajitas, 1 jar black bean soup.

Into freezer: 2-3 jars veggie chili, 4-6 servings cooked lentils, 4-6 servings garbanzos, 4-6 servings black beans.

All of your plans sound great! And Betsy, I'm drooling over the cheese fries!

Cowgirl beans are a new to us recipe. I have some baked beans in the freezer (I make a big batch at one time), so it sounded good on a tight grocery week.

Monday - Roasted eggplant and garlic with fresh cranberry beans and wheatberries, pan-roasted Brussels sprouts, tomato salad
Tuesday - Lentil-kale soup with polenta-corn cakes
Wednesday - Chicken cacciatore with brown rice, carrots
Thursday - Tofu stirfry with bok choy, bulgur

So glad I found this thread Dh who normally does the cooking is working nights for right now:

M-Whole wheat pancakes with applesause milk
T-Roasted chicken with acorn squash and pear slices
W- Pasta with meatballs and red sauce plus garlic toast

Thats all I've got so far
