We have several acorn squashes I'm roasting tomorrow as our vegetable & am at a total loss what to make with it.

Any ideas?? especially w/ pantry staples so i wont have to run out for ingredients??

I don't know what kind of staples you have, but...

risotto, or any kind of rice pilaf
quinoa
nice bread

you could also do white beans with sage and broth, that might be nice over rice or quinoa.

i've been enjoying butternut squash soup lately...could you make a soup out of them and throw some potatoes or other veggies in?

How about acorn squash bread !!It takes a while to make but it's good tasting !!

Mom of 8 children 4 Boys : and 4 girls :2 dogs named Kibblez and Brook , sadly miss my Husband that passed 03/03/2007 !Trully Miss my Brother Joey that passed on 3/25/09..Sadly miss my dearest son T.J that passed 1/19/2014 forever in my heart!

My family loves a type of cottage/shepherds pie stuffed inside 1/2 an acorn squash and topped w/ potato and baked. Yummy, low fat ( I make it w/ ground turkey/chicken ) and nutritious!!
