Need make ahead dinners for DH to take to s school - Mothering Forums

DH is in school, he has night classes 3 nights a week. He often leaves the house right after breakfast and doesn't come home until 9 or so, needing to bring lunch and dinner with him. We have been brainstorming ideas for things he can bring with him that taste okay cold AND we can make ahead, to lessen our load in the evening. So far, we've been making a lot of chicken on Sundays, and divide it up into portions to eat during the week, but that's about it.

Would love ideas for things that can be made ahead AND taste okay cold (no access to microwave or anything at school). He also doesn't like to eat too much meat/poultry.

Bean salads
Rice salads
Pasta salads
Tossed salads
homemade lunchable type stuff (meat, cheese, crackers)
Tuna or chicken salads

In a thermos:
casseroles
soup
chili
spaghetti

DH"s favorite make a head meal is stuffed peppers. I don't hvae time to post an exact recipe (and mine isn't even really exact) but I use a huge baking dish, cut peppers in half, take the ribs out and lay them out, stuff with sort of like an italian meatball style mix (think meatloaf, meatballs, etc) cover with marinara and cheese and bake. I make a weeks worth at a time and they reheat very well
