OK here is our plan....

Monday: Tilapia Nuggets, Baked Parmesan Fries, Broccoli
Tuesday: Cobb Sandwiches, Salad, Chips
Wednesday: Lipton Chicken Thighs (w/ mushrooms & onions) over Brown Rice, Italian Green Beans
Thursday: Homemade Mac N Cheese, Peas, Salad
Friday: Chicken in Puff Pastry, Herb Roasted Potatoes, Broccoli
Saturday: Leftovers
Sunday: Create something from pantry & freezer to use up

Desert this week - Crinkle Cookies

Lunches - Leftovers, Salad, or Egg Salad Sandwiches

Breakfasts - Toast w/ Eggs & Fruit, Oatmeal & Fruit, Muffins & Fruit, or Omelets

Wife&mommy....I'm so glad to see you will be posting the recipes to your meals on your food blog. I was just going to email you and ask for you to start doing that! I drool over the pictures and descriptions and wonder how to make everything

Oh thanks! I'm slowly adding recipes to the older posts as well so check on those if there was something you wanted. Or if it was something specific just ask and I can post it! Sometimes I have to type them up so that's why it takes longer.

I am really lacking motivation for this week's plan. I don't need to spend much money because of Christmas and everything, so I feel like my plan is very blah. But oh well.

Breakfasts will be chocolate chip pumpkin bread, oatmeal, and scrambled eggs.

Lunches will be PB&Js or leftovers.

Dinners:
1. bean burritos with cream cheese spread, tortilla chips & salsa
2. fish sticks & steamed carrots
3. English muffin pizzas
4. scrambled egg sandwiches & fruit
5. Catalina chicken, green beans, rolls
6. chicken & dumplings, squash, cornbread
7. something with chicken thighs

starting with tonight -

Saturday - roll your own sushi night (we had lox, cream cheese, tamago, tuna salad, avocados, sprouts, and masago)
Sunday - pancakes and scrambled eggs (with pureed cauliflower "hidden" in the eggs)
Monday - cheese soup (or maybe another kind of soup - we'll see)
Tuesday - tacos
Wednesday - hamburgers and hot dogs & roasted brocolli, and home made rolls (buns)
Thursday - penne with pink sauce and lox and peas
Friday - chicken nuggets, carrots, and sweet potato fries

Andrea, the cream cheese spread for the bean burritos is just softened cream cheese mixed with chicken taco seasoning. Nothing too exciting!

Well, I changed our dinners up a bit and assigned days to them now.

Sunday: chicken & dumplings, squash, cornbread
Monday: bean burritos with cream cheese spread, tortilla chips & salsa
Tuesday: turkey & Provolone melts, baked fries
Wednesday: vegetable soup & pistolettes
Thursday: fried eggs, bacon, toast
Friday: pizza & corn

I've only figured out tonight - a big spinach salad w/ chopped hardboiled eggs, crumbled turkey bacon, grilled chicken (cut into strips) and balsamic vinagrette

Can you tell I'm watching carbs and loading protein lately??

I am going to buy food tonight, so here is our plan for the next week starting today.

Wednesday: rotisserie lemon pepper chicken, cheesy mashed potatoes, garlic green beans, whole wheat rolls


Thursday: Chinese takeout(

Friday: Broiled Parmesan Tilapia, cous cous with red pepper and peas, broccoli

Saturday:Chicken Riggies(new recipe), sauteed greens, homemade garlic bread(bread machine)

Sunday: Winter minestrone, cornbread

Monday: Navajo fry bread tacos made with ground turkey, chips, salsa

Tuesday: Glazed Cornish Game hens , cornbread dressing,gravy, Brussels sprouts, potatoes, carrots,

Wednesday: leftover minestrone, grilled panini, fresh fruit

I thought I posted my meal plan for this week but I'm not seeing it. Hmmm.

Anyway, here it is, in no particular order.... Planning ahead sure makes for more frugal cuisine!

Breakfasts are any assortment of muffins, eggs, sausage, waffles, org. raisin bran cereal w/ org. milk (lazy day back up), fruit, smoothies etc

Lunch is usually leftovers and salad. Although lately I've been trying to have our main meal at midday (dh comes home for lunch) so lunch may be dinner and dinner may be leftovers w/ salad.

Dinners (the only thing I really "plan" so far)

Baked chicken (SAVE THE BONES!!!)
-mushroom stuffing (use up those stale bread bits, add shredded carrot, diced celery, onion, poultry seasoning, 3 or 4 mushrooms, diced)
-thyme steamed & buttered carrot sticks and asparagus with citrus dressing (lemon juice, zest, pinch of sucanat, ground pepper) - this is so incredibly easy and tasty!

Creamy Fusilli with Mushroom & Chicken - use the rest of the chicken from the baked chicken on previous day
-steamed green beans, possibly with a dilly yogurt sauce to dip in

Chicken soup - pressure cook baked chicken bones (preferably day I make the mushroom/chix dish, then refrigerate or freeze into ice cubes), add celery, greens, carrots, maybe a few diced potatoes or 1/2 cup barley, salt, poultry seasoning, bay leaf)
-homemade bread or rolls, whatever sounds good that day
-baby greens salad

Coconut shrimp with red curry sauce - yeah, yeah, I know shrimp isn't the healthiest thing on the planet but what am I supposed to do with these darn cravings???
-steamed rice (half and half jasmine white and brown)
-steamed broccoli or snow peas

Crab corn chowder - I had some fake stuff frozen (another craving from a few months ago) that I wanted to use up so I'll use it here
- Cornbread muffins
-maybe some salad, I don't know... whatever strikes me as a good side when I make it!

Black bean soup
-southwestern monte cristo sandwiches

Asian stir fry with bok choy & chicken
-brown rice
-sliced fruit later for dessert

shrimp isn't healthy? I thought it was....


(I don't eat shellfish but I was under the impression that it was a healthy choice)

they are bottom dwellers and most are farm raised so no, they aren't healthy. Plus there is the mercury issue with anything sea related.

(now that its the middle of the week...)

Saturday: roast chicken, roast butternut squash with honey and butter, micro-greens salad
Sunday: out- Thai Smile green chicken curry, rice
Monday: out at parents- ham and home-made mac n cheese mmmm (home-made but NOT TF with white flour pasta )
Tuesday: meat loaf patties, brussels sprouts, vanilla ice cream
Wednesday: spinach lasagna (brown rice noodles, meat sauce, mozerella cheese, spinach), home-made caesar salad
Thursday: coconut chicken curry, quinoa, carrots and spinach
Friday: lamb steaks, sweet potatoes, salad, baked apple

Happily married to DH for 6 years, in process to foster-adopt 3 children DD4, DS3 and DS2. We may be bringing half brother age 9 one day as well! We are not infertile, we just have decided that since there are precious children who need homes there is no need for us to have biological children.
