We're not planning for this weekend, because we're still doing some belated Christmas celebrating, but here's the plan for next week:

Monday, December 31
Bean burritos with cream cheese spread
Tortilla chips with homemade guacamole & salsa

Tuesday, January 1
eating with the parents

Wednesday, January 2
Oven-fried chicken
Macaroni & cheese
Stewed squash

Thursday, January 3
Crockpot beef tips with rice
Whole green beans
Cornbread

Friday, January 4
Leftover beef tips & rice

Saturday, January 5
Breakfast - cinnamon rolls
Lunch - Mexican pizza & corn

Sunday - ham and potato soup, fresh bread

Tuesday - tacos
Wednesday - bbq steak, onion rings, fries, salad
Thursday - salmon, veggie, pasta
Friday - chicken nuggets, roasted potatoes
Saturday - steak, potatoes, veggie
Sunday - sweet & sour chicken, fried rice

Dh was supposed to work out of town this weekend, but it turned out they didn't need him afterall. I thought I was going to be on cooking vacation until Tuesday. But alas, it was not meant to be.....


Friday:
Roasted Greek lemon chicken with new potatoes:
Couscous with sauteed zucchini and red bell pepper
Steamed kale with balsamic


Saturday:
Penne with Vodka Cream Sauce(Bertolli)
Salad with veggies
Homemade garlic bread(breadmaker)

Sunday:
Sirloin Tips with garlic butter
rice
salad
corn on cob



Monday:
Chicken Stew
Biscuits


Tuesday:
Crock pot Pork roast
black eye peas with white rice
Collard greens
Cornbread

Wednesday:
leftovers or pizza

I just went grocery shopping, so I'll share:

Dinners in no particular order~

*homemade veggie pizza
*veggie spaghetti/garlic bread
*pasta e fajoli/biscuits
*salsbury steak/mashed potatoes/broccoli
*New Year's Day~traditional black eyed peas/rice, braised cabbage, sauteed greens & ham

Here is the tentative menu for the week:
*orange marinated talapia and buttermilk mashed potatoes
*BBQ chicken (crockpot) with garlic bread and spinach salad
*New Year's Day: brined turkey breast, black eyed peas cooked with country ham bone (this brings luck), collard greens (this brings wealth), wassail (cause i didn't get around to making it at christmas)
*Cheezy Pasta Bake with peppers and spinach
*Pinto Beans and Cornbread

Fill in the in-betweens with leftovers, tuna salad, chorizo and eggs, and banana bread

Hoping that the New Year's meal will bring SPIRITUAL WEALTH and FERTILITY LUCK!! Huzzah!

This board has inspired me! Thanks ladies! Here is my first meal plan (in years!):

Sun the 30th - crustless spinach quiche & salad

Mon the 31st - scrambled tofu, peaches, & cottage cheese

Tues the 1st - sauerkraut & sausage (tradition)

Wed the 2nd - squash, apple, & sweet potato soup, salad, & beer bread

Thurs the 3rd - falafel, hummus, veggies, & sauce

Fri the 4th - crockpot beef, veggies

Sat the 5th - leftovers, raw veggies with dip

Lindsay, how do you make beef tips in the crockpot? What's your recipe? It sounds lovely, and I have a whole, whole lot of roasts in the deep freezer right now...

Welcome, Annie! Here's the recipe I use for crockpot beef tips:

1 lb. beef tips/stew meat
2 cans beef broth
1 can cream of mushroom soup
1 tsp Worcestershire sauce
1/2 cup red wine
2 tsp minced garlic
pepper

Put all ingredients EXCEPT cream of mushroom soup in crockpot. Cook on high 4-5 hours, or low 6-7 hours. If cooking on low, turn to high at this point and add cream of mushroom soup. Allow to cook until bubbly, about another hour. Turn down to low. Serve with rice, couscous, or noodles.

Yum: i definately wanna try out this recipe! Thanks for sharing everyone! I need to get a meal plan written out as well!
