What are you planning for this week?

Tonight we had a FEAST of breakfast foods for supper. We had waffles with syrup, oatmeal, scrambled eggs, and bacon. I love doing breakfast for supper.

Here's the rest of our plan for the week.

Sunday:
Homemade mac & cheese (crockpot)
Steamed carrots
Spinach salad with feta cheese & cherry tomatoes

Monday:
Frozen pizza
Corn

Tuesday:
BBQ chicken (crockpot)
Potato salad
Baked beans

Wednesday:
leftovers

Thursday:
Chili (crockpot)
Cornbread

Friday:
leftovers

OMG you are all so cute in your siggy pics

How do you make your mac and cheese in the crockpot?

I love breakfast for dinner. I make tons of waffles for the freezer and we eat them with berries and whipcream or syrup, and bacon. The kids could eat that every night!

Sunday we are having lamb, tzatziki, and something....gyros the next day for leftovers.

Monday I'm doing like 3 or 4 big pizzas for the weeks lunch leftovers.

That's all I have planned because DH is going out of town for work tues thru fri :

The rest of the week I will probably play short order cook and eat finger party type foods with the kids to make up for daddy being gone.

Here's the mac & cheese recipe, although tomorrow will be my first time making it!

All-Day Mac & Cheese

8 oz. elbow macaroni, cooked & drained
12 oz. sharp Cheddar cheese, shredded
12 oz. evaporated milk
1 1/2 cups milk
2 eggs
1 tsp. salt
1/2 tsp. black pepper
4 oz. sharp cheddar cheese, shredded

Spray crockpot with nonstick cooking spray. Place cooked macaroni in crockpot. Add 12 oz. cheese, milk, eggs & seasonings to the macaroni; mix well. Sprinkl with the remaining 4 oz. cheese, then cover & cook on low 5-6 hours or until the mixture is firm & golden around the edges. Do not remove the cover or stir at all during the cooking process.

I'll let you know how mine turns out!

My hubby is gone for work this week, too. Hope the time flies by for both of us!

I have grad class until 8 pm so I think its frozen pizza for DH
DD will be with MIL –DH is on his own.

Tuesday:
Class until 7:30
but I hope to prep a Meatloaf for DH to stick in oven

(basic chicken stew but use gnocci for dumplings)

Oh i HATE when that happens! that is my fear about mac n cheese dishes. My kids favorite is alfredo, just equal parts cream, butter, fresh parm cooked down for a few minutes to thicken. Pinch of salt and pour over pasta. The current fav is rotelli, or wagon....or bus wheels lol.

I have Annies box mac n cheeses but sometimes he HATES them and sometimes he can't live without them

I used to be very good about meal planning, but have fallen off the wagon lately and need some motivation to get back on. Our food costs have skyrocketed since I quit and we need to get back on budget. I've been buying way too many convenience food and have vowed to start making everything homemade again (including all breads). We have a very small budget foodwise this week so almost everything is made from what we have on hand. My husband and children have to have meat, salad and some type of bread every night as well, which makes things interesting to say the least. I also sneak a lot of pureed veggies into all of our main dishes.

Here is our dinner plan for this week:

Sunday - Dinner at my mom's house.
Monday - Turkey Tetrazzini, french rolls, salad
Tuesday - Spiced Pineapple Ham loaf, grean beans, salad, crock pot potatoes, biscuits
Wednesday - Chicken Enchiladas, beans, spanish rice, corn
Thursday - Ham and Cheese Omelets, pancakes, fruit salad
Friday - After Thanksgiving Turkey Carcass Soup, french rolls, salad
Saturday - Tuna Casserole, salad, biscuits

The only things I'll have to buy for this week's dinner plan are lettuce, onions, celery, cheese and sour cream.

That is great that you have all the rest on hand. I love weeks like that where the bill is low!

Ours is low right now because I'm using everything from the freezer that I made for post partum. It's been nice!

here's mine but we haven't made it down to the kosher butcher in a while (we usually go every two months - it's an hour away) - so all I have in the freezer are 4 dark meat quarters (leg and thigh) - oy. not sure what dinner this week or until I make it down - will actually end up being

6th - green eggs with english muffins & sweet potato breakfast potatoes (we put spinach puree in the eggs ala deceptively delicious. I put a lot more than she says. very very yummy)
7th - supposed to be soup but DH wants to go out. we get credit at some resturants in town due to dh's job and have not used them in a while... so I think we'll be going out tonight...
8th - enchiladas
9th - sausage and roasted veggies & collards. (maybe I'll make soup instead since I have no meat)
10th - lasagna rollups (from freezer thanks to feed-the-freezer thread!) (recipe is in that thread and I also added butternut squash puree)
11th - roast chicken (and veggies and potatoes)
12th - some kind of fish - I get it from work. (and veggies and a starch - quinoa most likely)

not to speak for Rachel but we do one of two things - cook enough to freeze for leftovers or only cook enough to eat. none of us in my house really like leftovers right away...

Starting this a little late but I really need to get my act in gear when it comes to meal planning. I am lost in the kitchen and hate cooking.

8th-perogies and farmer sausage plus a veggie
9th-salad, squash and pork chops
10th-CHEESECAKE It's my birthday so someone had better be taking me out or cooking for me, but there will be cheesecake
11th-salmon, rice and peppers
12th-salad,meatballs, rice and any leftovers if any

I usually take leftovers for lunches for all three of us. I also have been trying to make a big pot of soup on my days off for lunches when I am back at work.

We don't have alot of leftovers- my 3 boys eat so much, there is normally just one serving of leftovers which dh takes to work and eats for his lunch. If by chance we have alot at the end of the week, we will eat them for Sunday lunch- but that really doesn't happen much!! :-)

Ohhhh....

Beirrocks look yummy!! Like a healthy version of Runza (I used to live in Nebraska where these were very popular - we would even sell them at High School sporting events to raise money for the various geeky clubs which I was involved in...) mmmmmm cabbage

Great blog Rachel - how do you take the time to photograph your meals before devouring your yummy food?? I would get drool on the lens cap, or my husband's hands would be in the shot!!

Our meal week started last Friday since we were out of town until Wednesday and I didn't get to the gorcery store until Thursday.

Friday- homemade split pea and ham soup (a new recipe and OMGoodness it was good!)
Saturday- DH was out of town for work, so I made beans and rice
Sunday- MIL had us over for dinner
Monday- parmesan baked chicken, whole wheat cous cous and steamed veggies
Tuesday- NY strip steaks (DH has been jonesing for steak lately), baked potatoes and steamed veggies
Wednesday- char siu pork roast in the crock pot, brown rice and steamed veggies.
Thursday -Tuesday of next week- out of town again.

Man, we are having a lot of steamed veggies this week!

As for leftover- my DH, toddler and myself eat the next day for our lunches. We like leftovers. So easy for lunches.

Leah- wife to Chris : SAHM to Henry (03/06)and to Evelyn : (06/08). She is our heart attack survivor at 3.5 weeks and went on to have open heart surgery at 5 weeks for Coarctation of the Aorta.

I never knew this was here!

Here's our week (I only do weekdays, on weekends we either eat out, eat leftovers or eat the extra bits I buy for my lunch.)

Monday: Potato Soup, Haddock with Lemon, Asparagus
Tuesday: Baked Squash, Baked Chicken Breasts, Salad\
Wednesday: Spaghetti with precooked, frozen sauce
Thursday: Tofu Stirfry and rice
Friday: Quickfry Steak, Salad, and freezer veggies.

The potato soup last night was really good!

I will definitely post the recipe for the split pea and ham soup, but I don't have time this morning. I need to run to the gym. It is from a new cookbook and it isn't on their website, so I will have to type it up by hand.

I will definitely do it this afternoon while my son is taking his nap.

Lol-- it is hard for them to wait- the kids tend to roll their eyes "we have to wait for Mom to take pictures of it."

They tasted like a McDonald's hamburger- well, the ones I remember tasting so good when I was a kid. For some reason they taste horrible now (well, the McD's ones!) But they fell everywhere. :-) I kind of wondered about that before making them, but they sounded tasty- so I did anyway.
