My mother knows we are going through a rough time, financially, and so has been bringing her leftover food to us. Today she brought over a portion of a big pork roast that she had. It is probably around 3 pounds. I would just roast it, but we would eat it in one meal with enough leftovers for the next day's lunch. I would love to stretch this into three meals for my family of 5. Any ideas???

I would probably slice some of it thinly and do a stirfry or pork fried rice, and use some of it for pork tacos verde or burritos.

If your family doesn't like pork verde-fied, you could braise some of it with bbq sauce, and do a pulled-pork sandwiches thing...

Serve it over rice, maybe by adding a basic curry sauce.

Individual meat pies (just wrap it in pie crust), that would help with your serving sizes.

use it in a cassarole, like anything you'd make with chicken just use pork instead.

put it in soup

sandwiches

Thanks for the great solutions. We never really eat pork, as my DH isn't fond of it, so my mind was completely blank. The only things I could pull up on allrecipes were roasts.

I think we'll have BBQ pulled pork sandwiches with some of it, and a casserole or two.

I love roasting a pork loin with mustard and fennel. I"ve sliced it for sandwiches, or used it in quesadillas or fajitas or soemthing

Cook it however you want to for pulled pork, then separate out a portion for that and set aside the rest for other things.

Enchiladas are a great way to stretch your meat. A little meat, a little cheese, some onions, olives, green chiles, tomatoes, whatever, some sauce and tortillas.

A burrito or taco "bar" is another good use for it.

Stir it into fried rice, or add it to an omelette, toss it with pasta.
