Can I freeze Shredded Carrots? - Mothering Forums

I use shredded carrots to make muffins. Right now I have A LOT of carrots, and no desire to make that many muffins! Can I shredded the carrots and freeze them for later use?

I would probably try with a little bit first, to see if they come out ok from the freezer. I know some sites recommend blanching before freezing, but for whole carrots. I don't know how well blanching would work on shredded.

I have some i need to use up, do you have the recipe for your muffins? I'm not sure if you can freeze them.

I freeze shredded carrots in glass jars, I just pack them in, it works fine for me. Its a lot easier to shred a bunch at once because you don't need to clean everything up so often
