OK here's the next meal planning thread, what are you all going to eat? I'm still working on ours. We ordered a big amount of food from the co-op and I'm waiting to see what all we actually get before planning too much.

Tonight we are planning to have organic steaks and some veggies, maybe sweet potatoes & broccoli. Tomorrow we are having chili with cornbread. Monday will be some sort of chicken dish from the freezer, and that is as far as I've gotten.

So what are you having?

OK I finished our plan.

2 Saturday
Breakfast - Pumpkin Muffins, Fruit
Lunch - Sandwiches, Fruit, Chips
Dinner - Organic Steaks, Baked Potatoes, Broccoli

3 Sunday
Breakfast - Whole Wheat Blueberry Pancakes
Lunch - Finger Foods (spinach dip, veggies to dip in, etc.)
Dinner - Chili (from freezer stash), Cornbread

4 Monday
Breakfast - Oatmeal, Fruit
Lunch - Leftover Chili & Cornbread
Dinner - Teriyaki Chicken (from freezer stash), Rice, Zucchini

5 Tuesday
Breakfast - Eggs & Toast
Lunch - Leftover Teriyaki Chicken, Rice, Zucchini
Dinner - Cobb Sandwiches

6 Wednesday
Breakfast - Oatmeal, Fruit
Lunch - Leftover Cobb Sandwiches
Dinner - Chicken Pasta Salad

7 Thursday
Breakfast - Baked French Toast
Lunch - Leftover Chicken Pasta Salad
Dinner - Zucchini Orzo, Carrots

8 Friday
Breakfast - Leftover Baked French Toast
Lunch - Leftover Zucchini Orzo, Carrots
Dinner - Cranberry Chicken (from freezer stash), Sweet Potatoes, Broccoli

I'm going to wife&mommy's house for dinner this week!

I'm going to make a better plan tomorrow but for now:

tonight-beef burgundy, duchess potatoes and salad

l-leftovers
d-baked chicken, lemon broccoli with fresh pasta

Tues
-chicken salad sandwiches (using leftover baked chicken), avocado salad with walnuts

Ahhh, I'm having a hard time with this area of my life lately. Let me go look in the freezer & pantry, and I'll be back this evening.

I'm back already. I went ahead and made a plan:

Saturday, 2/2 - spinach tortellini, salad, garlic bread
Sunday, 2/3 - loaded baked potatoes, steamed carrots, salad
Monday, 2/4 - chicken & dumplings, lima beans, cornbread
Tuesday, 2/5 - black bean & cheese burritos, tortilla chips w/ guacamole
Wednesday, 2/6 - spaghetti, salad, rolls
Thursday, 2/7 - baked breaded fish fillets, mac & cheese, salad
Friday, 2/8 - scrambled egg sandwiches, bacon, fruit

I am game this week...just starting with dinners....

Saturday Pizza
Sunday Potato Soup
Monday Left overs
Tuesday Spagetti and meat sauce with garlic bread
Wednesday left overs
Thursday daddy decideds dinner
Friday souvlaki with pita's

Since there are just 2.5 of us, 1 meal will typically last us 2 nights plus give me some for the freezer. I also have no clue what DH will chose for dinner on thursday, that is my late night, and he is off work so it is all him.

Cutting back on the meat, Lindsay? We are trying to... but I'm using up my freezer stuff so there is still a lot of it in there.

we were supposed to have fish sticks tonight but instead we had roasted fennel with onions, garlic, and beef sausage. i should have made rice or something too but i realized that too late & just served sliced bread with earth balance
tomorrow is french toast
monday - tortillini soup
tuesday - i am not sure
wednesday - spagetti with meat sauce (sauce is in the freezer. might make meat balls too)
thursday - lasagna rolls from freezer
friday - roast chicken

Yeah, my hubby's gone all week for work, and the kids don't care if we have meat, so I'm trying to save some money this week!

I'm just planning super as lunchs are often leftovers or soup and sandwiches. I'm also preparing dinners for an injured friend when he needs so the planning may not stay on track as planned.
2 - leftover chinese food
3 - leftover spagetti and salad
4 - lemon chicken, sauted suncokes and mushrooms with garlic
5 - fetticcini alfredo with smoked salmon
6 - left overs
7 - squash soup
8 - lasanga

Here's ours-- My goal is to stay on track this week. I have 4/5 late nights this week, so my plan is to have fast easy things.

Mexican Pot Roast(slow cooker)

5- (late clinical so DH will prepare)
Chicken nuggets
mac and cheese
peas

6-(late clinical)
Tacos using leftover pot roast

beans

Chicken broccoli rice casserole
some kind of greens
rolls

can i play? I am really trying to plan out (and stick to!) a weekly menu. it's hard b/c DH works unpredictable hours and might not be home for dinner any given night (not knowing til the last minute)...But, I really need some kind of a plan in order to save $$ and keep me sane!

monday: leftover chicken gumbo over rice; cornbread
tuesday: calzones; salad
wednesday: roast chicken; baked sweet potato; broccoli
thursday (veg night--cook for vegetarian family members): shrimp & veggie stirfy over rice noodles
friday: chicken pot pie; green beans; bread
saturday: Mephis style stew

I have so much food made up right now it's ridiculous!

Green enchiladas
Stuffed peppers
Homemade pizza - different cheeses for the kids, pineapple jalepeno and chicken for DH
I bought some black cod yesterday that I am making tonight but I don't have to do much cooking untill thursday.

DH is set for food till then and the kids and I are doing breakfast tomorrow for dinner, and at my moms on wednesday

Thursday I'm making a roast leg of lamb for gyros and I made the tzatziki yesterday. The kids and everyone will eat that with pita for lunch/snacks too. Friday I will probably wing it with the kids too because DH will still have gyros.

Lately I've been doing a lot of separate cooking. I don't mind and it' s been working. This week is easy because I have so much food already made up. I have been keeping a few meals made up for DH because DD is going through a no food thing, and DS is in to making his own food .

Kind of a low key week, and I didn't get breakfast or lunch planned this week. But there's leftover and sandwich stuff as well as oatmeal and eggs, so we'll make it.

This week we are having:

chicken noodle bowls
tater tot casserole
bar-b-q'd chicken

I generally fix three different things. We always have plenty of leftovers and we generally go to my dh's granny's once a week for supper. She always sends home leftovers with us! :

Tonight, had pork chops with shallot/sherry/cream sauce, couscous, apple/celery/goat cheese salad.

Th-apple/cottage cheese pancakes, fresh oj, fruit salad, maybe mini sausages

Fri-risotto, avocado salad with walnuts (cancelled this and replaced with stir fry from leftover pork chops, some grated carrot and sliced onion with cashews over udon. YUM!)

Sat-over to friend's house for dinner

Sun-mushroom soup, garlic toasts, green beans

Mon-white bean and rosemary soup (from freezer), cheese puffs

Tues-eat leftovers cuz we are leaving for a week-long holiday on wed!
