Okay, I've got a TON of cooked chicken now... I did a roast, picked off the meat (we ate some right away), then today cooked the carcass along with another fresh whole bird and made oodles of yummy bone broth... picked the meat off THAT bird (then roasted the bones and threw them back into the simmering pot yummmm)
One bird was 3.5lb, the other was 5lb, so now I've got a big mound of chicken meat bits. The 'easy' idea would be to freeze it -- but I've still got a big mound of chicken meat in the freezer from the LAST time I made a batch of broth...
So, I'd like to eat this chicken over the next few days while it's fresh and I need ideas!
Tomorrow we're just going to go good old meat and potatoes, mashed potatoes with the chicken and gravy from some broth. I've got some sour cream and some salsa, I could figure out how to make wheat tortillas and make chicken wraps, mebbe with some rice... And I'm thinking about trying a chicken curry.
Any other brilliant ideas worth trying? We loooooove chicken, just looking for fresh ideas.
