Ideas for lots of chicken - Mothering Forums

Okay, I've got a TON of cooked chicken now... I did a roast, picked off the meat (we ate some right away), then today cooked the carcass along with another fresh whole bird and made oodles of yummy bone broth... picked the meat off THAT bird (then roasted the bones and threw them back into the simmering pot yummmm)

One bird was 3.5lb, the other was 5lb, so now I've got a big mound of chicken meat bits. The 'easy' idea would be to freeze it -- but I've still got a big mound of chicken meat in the freezer from the LAST time I made a batch of broth...

So, I'd like to eat this chicken over the next few days while it's fresh and I need ideas!

Tomorrow we're just going to go good old meat and potatoes, mashed potatoes with the chicken and gravy from some broth. I've got some sour cream and some salsa, I could figure out how to make wheat tortillas and make chicken wraps, mebbe with some rice... And I'm thinking about trying a chicken curry.

Any other brilliant ideas worth trying? We loooooove chicken, just looking for fresh ideas.

Chicken pot pie, sometimes I do individual/handheld ones and freeze them

A "gourmet" bbq chicken pizza or satay pizza

Use the salsa and some of the chicken broth to make a chicken tortilla soup

Now I've got some dinner ideas, too.

A dish that my SIL in Turkey taught me is something she calls "Tavuk Bechamel" or "Chicken in bechamel sauce". It's just a thick bechamel, peas and shredded chicken that is mixed together and baked in a casserole. We love that. Really easy to make.

We also love to add it to various pasta sauces. HTH!

You can make homemade pita bread super easy. There are tons of recipes online. Then you could have chicken in the pitas with sliced tomatoes and cucumber sauce, yum.

Also, I love chicken salad. I put celery, apple, and walnuts in mine. MMMM!

Oh, my. This is making me hungry! Im allergic to chicken, but have a HUGE turkey in the freezer awaiting roasting. The pitas sound divine, as does the chicken(in my case turkey) in bechemel sauce. Mmmmmmm...off to menu plan...
