good low carb, raw food diet menu - Mothering Forums

We do not not eat junk carbs in our house ( white bread, potatoes, chips, rice etc) My dad is diabetic and cant have those things, I eat a raw diet. My paretns tend to eat a lot of meat and salads. I want to expand just a bit our menu

Any suggestions

Needs to be low in salt, sugars and high in nutrient based veggies/fruit

I am at a loss. I look in the diabetic cookbooks but they use "funny" sweetners and the food always taste a bit off.

I would suggest several books:
"Nourishing Traditions" by Sally Fallon
"The Body Ecology Diet"
"The Maker's Diet"
"Conscious Eating" by Gabriel Cousins

These books include lots of wonderful soups, salads, dressings, meats, cultured veggies and dairy. They also include limited grains, only soaked/sprouted, cooked and/or raw.

For example yesterday we ate:
Cauliflower Dill soup (from the Body Ecology Diet, not raw)
1 tbs. extra virgin coconut oil
1 diced onion
1/4-1/2 cup chopped fresh dill
1 large or two small heads of cauliflower
sea salt to taste
Saute onions in oil. Add dill, cauliflower and water to cover. Simmer 20 minutes. Then puree. Makes a creamy, flavorful soup. Perfect for breakfast lunch or dinner. (I would think you could make a good raw version of this). Its delicious! Even my six-year-old loved it.
