so we have to make at least one more night a week a meatles meal (one night is pizza night)

Pizza is always good!

I also love to do tacos or burritos with either black beans or refried black beans, cheese, salsa and lettuce.

Stir fry

Angel hair pasta with chopped tomatos and olive oil

Baked beans enchilada style, faijoda (sp?), dals, potatoes/sweet potatoes with curry and rice, ravioli's, stir fry's (use rice noodles instead of rice for a change, they're delicious!!), pesto... black beans & rice..

Vegetarian chili, bean burritos, falafel and pitas, lentils and rice (Indian style), vegetable or bean soup with bread, black bean quesadillas, tacos or enchiladas, burgers made from beans and rice, breakfast food (eggs, waffles, pancakes, etc.).

omelet, grilled cheese sandwich, lentils, quinoa, veggie soup, fettucini alfredo, or just graze on some good cheese, olives, pickles, etc.

last week I made shepherd's pie out of leftovers that was soooo good - and vegan even!

sauteed onions, garlic, mushrooms & zuccini - tossed in leftover black beans & corn plus half a jar of salsa I wanted to use... and some frozen veggies I wanted to use... (we are moving & I want to clean out the freezer). simmered for about 20 minutes. topped with mashed potatoes (also from the freezer) - baked at 350 till the potatoes were brown.

sooooooo good.

I've been enjoying making homemade orrechiette (no CLUE how to spell wihtout dictionary...) with fresh parm and chickpeas.

Hey that's on my list next week! I LOVE shepherds pie. I usually make the top with parsnips, or sweet potato and regular potato or actually any concoction of the 3

I recently also started making a sort of "impossible pie" type of thing with veggies, except it's homemade whole wheat pastry flour and vegan. But the same idea if you know what an impossible pie is...you know, the baking mix and eggs thing poured over stuff

I love bean burritos loaded with veggies/sour cream. I love cucumbers, lettuce, tomatoe, onions, and tons of other veggies. Yum.
