What is everyone planning for this month (or week!)? I haven't done mine yet and was coming for inspiration. Can't believe it is already JUNE!

OK here is what I came up with for this week:

1 - Cheesy Chicken Broccoli Rice Casserole, Carrots
2 - Chicken Pasta Salad
3 - Cobb Sandwiches
4 - Spinach & Bacon Quiche
5 - Out - Anniversary
6 - Taco Pie
7 - Crockpot Chicken & Dressing, Green Beans (maybe mashed potatoes)
8 - Leftovers

I'll join in too! Only today and saturday are set, so we will cook the others sometime during the week. It's a little heavy on beef this week, but I am trying to use the freezer/pantry for meals.

1). Slow cooker beef brisket, new potatoes, green beans, yeast rolls, apple cobbler

2).Tostadas using leftover brisket, refried beans

3).Italian bowties and beef skillet, sweet peas, salad

4).Tuna Salad Wraps , pasta salad, fresh cut fruit

5). Grilled greek chicken breasts (I will marinate in greek seasoning and lemon), Spring Celebration Orzo, sliced fresh tomatoes, garlic bread:

6). White beans and rice, sauteed collard greens, cornbread

7). I have evening clinical, so dh is on his own. --- He will probably order pizza or have leftovers/grilled cheese.

I'm in and here's my week:

Sun: Italian Mac and cheese(new recipe), garlic bread and salad

Mon: Beef stirfry with leftover steak and rice

Tues: Chicken alfredo sandwiches(new recipe) and greek salad

Wed: Creamy ham fettucine w/ broccoli, salad and bread

Thurs: Cobb salad, blue cheese bread

Friday: Keilbasa biscuit pizza(one of DH's faves)

Sat: Cooks choice as it is every week

oh i found it! i really LOVE your blog. i bookmarked it and plan to use it frequently!!! i already meal plan, but i love your recipes and pictures(i NEED pictures or it loses me - lol!)

Yes I slack on the pictures sometimes, especially if it is a meal we have had before! It's hard when your child is hungry and husband is hungry to say wait let me take a picture! By the time I find the camera and memory card and hope that the batteries are charged, they are getting anxious!

I really liked your blog, too! I am impressed with your meals, let alone by the time and patience you spend blogging them! Thanks for the resource! I have a question, though...I didn't see a recipe for the homemade sauce "with tons of veggies" you use so often. Do you have one you can share?

Yeah I make it different every time... it's not really a recipe! I put tomatoes (tons!), tomato sauce (a few large cans), italian spices to taste, garlic (lots!), onions, mushrooms, carrots, spinach, zucchini, and squash. I cook all the veggies first, then mix them in with the tomatoes/sauce and use my emersion blender to make it all smooth. Let it cook out without the lid on until it's thick enough (sometimes a few hours). Then I freeze it in 3 cup portion sizes. My family can't tell the veggies are in there as long as I blend it well enough and it still tastes great. Sorry that isn't a great recipe, I just kinda throw it together!

I've been inspired by your blog wife&mommy, I'm thinking of doing something similar of my own. All my friends are always asking "how do you make..." and this way I could say go to my blog, plus I love taking pictures of food, especially my home baked pizzas they can be a work of art. I like how you have the menus and what works and what was not so great. Good job!

Oh I'll be right on that. I really do need to do it, I always get call from my friends asking me about dishes I've made and also since I've been meal planning I have a goal of one new dish a week, this week I making 2, last night was Italian Mac N' Cheese and it was good. I'll post when I get it going.

Anyone else here have a problem sticking to a meal plan? We eat what I buy but I can never tell you whether what I have written down is what Ill make or if Ill use the same ingredients (plus or minus a few) to make something different.. I don't know if its pregnancy or what but I have no idea what I want to eat till I start to cook

Sunday - tacos
Monday - chicken and dumplings, steamed broccoli
Tuesday - steak, rice pilaf, leftover broccoli, plus carrot sticks, banana slices, and cucumber slices
Wednesday - meatball soup (mini meatballs, chicken broth, carrots, mini pasta shells)
Thursday - I have no idea
Friday - I have no idea
Saturday - I have no idea

How do you think that far ahead? I take out the meat to thaw the night before, so I do think that far in advance, but if I think about tomorrow night, I draw a big blank. Do you just look in your freezer and see what you have? Do you plan it out before you go grocery shopping? How do you DO this?

I'm trying to get back on the meal planning wagon! Here's this week.

1. Cheese Ham Salad - Annie's Deluxe shells with ham and peas - I add pured summer squash to the sauce too

2. Spaghetti w/ red peppers and onions and salad

3. Stir Fry w/ brown rice

4. Chicken burgers, sweet potato fries, green beans

5. Beef Stew with salad

6. homemade pizza

7. rice balls and tofu soup

Well a few months ago I was in the same boat kjbrown92, I just started looking through my pantries, freezer and fridge to see what we had. The also every week I look at the local store flier and see what is on sale and fill what ever needs there are in our house. Meal planning has really simplified my routine, and even with being a SAHM I find it has helped me a lot.

A: things get used, that pack of whatever hiding in the freezer gets USED, not thrown away.

B: It helps me plan ahead, for example I do a lot of morphing,taking items from one meal and creating another. This week we had chicken sandwiches, but I cooked enough chicken for my cobb salad, so I already have some things done. I owe that thought to Robin ******'s Quick fix meals on FN, she rocks the meal plan idea.

Every week I make a short list of what we have and then go from there on what I can make, and I do my own personal challenge of a new meal weekly, so I look through my cookbooks and magazines to find some thing that sparks me. Once I started I realized how much we actually had, I also am on a stockpiling mission so that makes things even more available to me. I'd say just try it and see. Good luck.

P.S. I personally get my DH in on the plan, he does loves everything I make, but it makes him feel like he's got some say in the matter, but that's just me.

Sunday was frantic so we grilled out Hebrew National Franks and Polish sausages, had leftover potato salad and leftover bean salad.

1st-Monday
l-leftover hotdogs, leftover potato salad, avocado slices
d-omelets with red onion and cheese

2nd-Tuesday
l-soup, cheddar and wheat crackers, sliced red apple (I'm obsessed with red apples right now!!!)
d-grilled steak, carrot/chive salad with lemon yogurt dressing (greek yogurt...mmmm), jasmine rice with feta cheese

3rd-Wednesday
l-goat cheese tart with red onion (and tomatoes on my half) with fresh rosemary, leftover carrot salad, teensy bit of leftover steak
d-Crash Hot Potatoes, grilled chicken breast, leftover carrot salad

4th-Thursday
l-leftover tart
d-going to potluck. Will bring: maple walnut snack cake, spinach/chicken tarts (using leftover chicken breasts) with pine nuts and sheep cheese, chocolate chip cookies

I haven't planned beyond that. Not feeling very creative these days!

i don't know if this will help or matter...but i always cook my hamburger beforehand and put it ziploc bags by portion for meals. it's a huge time saver for me, and i never have to deal with frozen raw hamburger since i just cook it all when i buy it. if you don't eat hamburger, this tip is pretty useless though
