We're heading to a family reunion next week and our family is in charge or breakfast for 40ish people. I need tried and true breakfast casserole recipes. Also, any idea on how many 9x13s we'll need to make?

Are you making one kind of casserole or several? My standard brunch menu has 3 different casseroles:
egg/sausage casserole
hash brown casserole
french toast casserole
and I usually do a fruit salad also

Each dish makes a 9x13 pan, and I comfortably feed 14-16, usually with leftovers.

I can get recipes for any of these if you want.
