August 7th revise: We have way too few leftovers (they loved my plan and devoured it-- yeah!) so I'll have to roast a chicken for tomorrow night, I guess. It's a good thing too, since last week I had to toss two things: a double batch of greek mini-pizza muffin (I think the tomato paste had gone bad--ew!) and a potato salad with vinaigrette instead of a mayo dressing which I thought was great, but forgot about the rest of it in a container in the back of the fridge. (DH said "It's not a potato salad if it's not creamy." My response? If potatoes are the main ingredient, it is a potato salad!)

My menu is coming together for the week:
Last night 8/9: Dinner at a friend's house
bring your own steaks, I took salad, and we ate grilled potatoes and corn on the cob.
8/10- Sloppy joes, salad, green beans
8/11- homemade pasta with morel mushroom sauce, garlic bread, salad
8/12- something with beans
8/13- something with split peas
8/14- leftovers (school orientation/ice cream social to go to)
8/15- pizza

I need some inspiration. I just inventoried my pantry and am trying to use up old dry beans. I hope they're not too old to be good.

Can you tell about that? How you fix them and so on? I've only done tacos with ground beef or chicken. We do refried beans on the side and once in a while "inside" the taco but not used black beans before. I'd love to hear more.:

Black bean tacos: I either use a can of refried black beans and spread them inside the taco shell (like you would in a burrito) or mix a can of whole black beans with some Boca crumbles and taco seasoning (we're veg) and use that for the tacos. Hope that helps!

Funny, because we didn't end up eating them last week, so they're going on this week's menu!

8/16: Homemade mac and cheese, steamed green beans, raw veggies
8/17: Chik nuggets, fries, watermelon
8/18: Tofu salad sandwiches, corn on the cob, fruit salad
8/19: Spaghetti, salad, garlic-cheese biscuits
8/20: Black bean tacos
8/21: Veggie Pizza and salad
8/22: Spinach cheese ravioli, whatever veggies we have left
8/23: working at the state fair....so, cheese curds and mini donuts!

New here, but I have been doing menu planning for awhile with my family. I don't know if eveyone just post what they do for dinner, but I plan out breakfast too for the week, so I will post that as well.

27-breakfast~blueberry muffins, fresh fruit, and fresh OJ
dinner~BBQ at my parents house....burgers, hot dogs, salads, etc.
28-breakfast~french toast topped with strawberrys and sausage
dinner~cornbread topped bourbon bbq chicken with green beans
29-breakfast~oatmeal, or whatever the kids feel like
dinner~teriyaki chicken in the crock pot, steamed white rice and broccoli
30-breakfast~an egg, ham and cheese casserole, with tomatoes on top
dinner~a veggie pot pie, with a tomatoe and avacado salad

I also made some apple walnut squares and a blackberry apple pie this week, per dh's request. I am working on a menu for next week right now. Everyone has such yummy ideas, I might be stealing a few for us this week!!
