I want to make chicken soft tacos tonight. How do you cook the chicken to shred for the tacos? I have several bone in chicken breasts and I tossed them into the crock pot.. figuring slow cooked might give me tender meat.. Should I season them with something??

How do you do it?

I put mine in the crock pot with some water and taco seasoning, and then shred them with a fork when done. You could also just do S&P, maybe some garlic or other type of seasoning.

I toss them in the crockpot with a jar of my favorite salsa. They shred up perfectly for tacos.

We just had those last night! We don't like our chicken shredded, so I cook the breasts the night before on the grill, slice them thin the day I'm serving them, saute some onions and green pepper, toss in the chicken and a can of Rotel tomatoes and let it simmer till most of the liquid is gone. They are wonderful, but a bit on the warm side due to the tomatoes. I only cook one large breast though as it's only 3 of us. I always keep some aside for DD. She likes salsa on hers and that plus the tomatoes would be too much for her.

Crockpot shredded chicken is the ONLY way I will eat tacos. Mmmm.

I put some chicken breasts, chopped onion and maybe chili peppers and garlic, season with my favorite spices and a little bit of chicken broth. They shread up so nice and juicy!

I use the meat left over from making stock, or grill them.

I'm probably way late on this, but my favorite is about 2 # of chicken breasts in the crockpot with a can of diced tomatoes & some onion if it's on hand. Cumin, chili powder, cilantro, s&p to taste. Shred - we normally have enough for about 4 meals (I have some big eaters too!)
