Hi there!

I just started meal planning last week, having been inspired by some of you on this forum and let me say that I love it! It saves me so much time and energy and gives us good variety and health. YAY!

also, i'm looking for some easy lunch ideas that might spread over a couple of days. We already have a soup, a quiche and planned leftovers, but I need a couple more ideas. thanks so much!

btw, we are lactose intolerant and eat very little wheat.

I finish up leftovers all week for lunch so we can have a little more variety at night. DH has a huge salad for lunch every day with lots of seasonal goodness on it/in it. He gets a little discouraged when chard is the only green so it's lots chewier than romaine, say, but he has fun toppings too-- like something crunchy always, and one of two favorite dressings I reserve just for him-- vinaigrettes for the family salads, and his blended treats for his own salads. He tires of the same old thing very slowly, however, so I lucked out-- mostly although the prep of his salads does sometimes get monotonous.
