OK Here is our week so far. I didn't make one for last week because we had company and I wasn't sure what we would be doing so next weeks also includes this weekend for me.

1 - Saturday:
B - Yogurt with Granola & Pears
L - Eggs, Toast, Sausage
D - Pork Chops, Broccoli, Herb Roasted Potatoes

2 - Sunday:
B - WW Pancakes & Fruit
L - Turkey sandwiches and carrot dippers
D - Calzones, Green Beans & Salad

3 - Monday:
B - Oatmeal & Fruit
L - Tuna Salad sandwiches with grapes
D - BBQ Chicken, Sweet Potatoes, Corn, Salad

4 - Tuesday:
B - Egg Sandwiches & Fruit
L - Macaroni & cheese with peas
D - Leftovers from last night

5 - Wednesday:
B - WW Pancakes & Fruit
L - Out? Or make turkey sandwiches
D - Shepard's Pie with biscuits

6 - Thursday:
B - Eggs, Sausage, & Toast
L - Leftover Shepard's Pie
D - Cashew Chicken Broccoli StirFry over Rice

7 - Friday:
B - Yogurt with Granola & Fruit
L - Leftover StirFry
D - Breakfast for Dinner (Chris' Choice)

8 - Saturday:
B - WW Pancakes & Fruit
L - Egg Salad Sandwiches & Carrot Dippers
D - Chili & Cornbread

9 - Sunday:
B - Oatmeal & Fruit

D - Tamale Pie

Sunday-lunch:senate bean soup, supper: wings
Monday--chicken pot pie, salad, broccoli rabe
Tuesday--Mexican chicken salad
Wednesday--pesto tortellini with cherry tomatoes, salad
Thursday--leftovers or omelets (going out of town the next day)

I can't get to the broccoli salad recipe. I remember my grandmother used to make a broccoli raisin carrot salad that was hot and was tossed with bacon drippings. Is it the same kind?

Oh, and your loaded baked potatoes reminds me of my loaded potato soup. It's basically runny mashed potatoes, but you toss in some sauted onions, garlic, and celery. Topped with cheese, bacon bits, and sour cream! :

Huh. The link worked for me. It's made with real bacon, just cook, drain, and crumble it. Then mix it with broccoli, onions, mozzarella. For the dressing, you use mayonnaise, sugar, vinegar - mix together, pour over broccoli mixture.

It's better made a day ahead.

Now it's working. But, it's not like the salad grandma makes. But I'm going to see her tomorrow - FOR THE FIRST TIME IN 15 YEARS!!!!!! (Sadly, it's because her "baby" boy died, but at least we can afford to go see her.)

Impossible broccoli cheddar pie? I must know more about this one!

I forgot to post our first week of November but we stuck to it really well, so I'll copy it in if I can remember it, even though it's over!

Hi, mind if I join? so many great ideas on this thread! you ladies are so inspiring!

Money is super tight for the next couple of weeks so I am planning to do as much as possible from the pantry/fridge/freezer without shopping. And I think that posting here will help keep me on task--these are all meals I brainstormed from stuff I already have on hand.

Here's what I have planned so far:

13: dijon-tarragon sauced chicken breasts, short grain brown rice, balsamic glazed turnips, green salad
14: spaghetti with marinara sauce & cannellini beans, green salad
15: salmon-rice patties (made with leftover rice) with yogurt-tahini sauce, green salad
16: sauteed breaded pork cutlets w/ cheddar-mustard sauce, roasted fingerlings, frozen peas
17: sweet potato & black bean enchiladas, Mexican style quinoa
18: lentil minestrone w/ whole grain crusty bread (from freezer)
19: nachos with refried beans, cheese, salsa & guacamole, leftover quinoa

Mon- Tacos and Black Bean Dip
Tues- Crockpot sloppy lentils, roasted broccoli, oven fries
Wed- Peanut butter pasta with peas, cauliflower
Thurs- Skillet rice and beans
Fri- spaghetti or frozen pizza

Breakfasts are bagel w/cream cheese, peanut butter toast, or cereal
Lunches are leftovers or sandwiches

This weeks dinners-

Sunday (today)- Homemade veggie pizzas with dough and sauce from scratch
Mon.- Beef stew from scratch and fresh homemade bread
Tues- strawberry waffles and eggs
Wed.- Chuck roast with homemade noodles and gravy (gotta use up the other half of the roast ), steamed carrots
Thursday- Red beans and rice, homemade salsa and tortilla chips
Friday- Baked potato soup & biscuits
Saturday- Big green salad and homemade hummus & pita

Breakfast is oatmeal, bagels, or eggs.
Lunches are leftovers, sandwiches and I've been making a big pot of soup on the weekends for lunches too. This week's is broccoli and cheese.
