Hi! I'm getting my first pressure canner this week and I want to start canning. I'm so excited. I am hoping to get recommended recipes from either the Ball Blue Book or the USDA Guide to Canning. One thing I'm especially interested in is salsa and I wanted something TNT.

Yay! Another canner! I just picked up an awesome book at my extension office called "So Easy To Preserve" I think it is from the university of georgia. It has all the basic 'rules' and tons of recipes- I highly recommend it! Also your extension office should have canning bullitens for literally anything you could want. Shamefully I think I have always open kettled salsa and never had a problem. Of course I have no recipe for that since I just dump stuff together! GL!

I am another canning maniac! I get my recipes from the Ball canning book, but mostly just dump stuff together and taste. A good web site that was recomended to me, was USAcanning.com I think. If you type in recipes for canning, I'm sure a lot would come up. Summer is hot and sticky in the canning kitchen, but just think of the winter night when you open those peaches or whatever and dream of summer!!!:

i've been using the _putting food by_. found it used for very cheap (and have seen it at other used book stores. has every recipe i've needed/wanted.

Do a google search for "canning salsa" or "canning X-veggie" and you'll get all sorts of hits. Many university extension websites have great info on canning food safely.

Can I bottle turkey meat? I pulled my turkey out of the deep-freeze before we got invited to someone else's house for Thanksgiving. I thought I would just roast it, anyway, and put up the meat by the quart in my pressure canner. Is that even possible?
