My DH has been talking about seeing a mental health professional about his social anxiety, and I told him I would search our insurance's list of providers, but I don't know whether I should be finding a counselor, a psychiatrist, or a psychologist. Each category has completely different doctors listed--no overlap. Which category would be best?

Does he have any ideas about whether he would want to take meds or not?

If he is considering meds, then go with psychiatrist.

If he wants to try to learn techniques to manage or reduce the social anxiety, go with psychologist.

Personally, I would start with a psychologist. From there, the psychologist might recommend he see a psychiatrist for meds in addition to therapy or he might feel therapy alone would be sufficient.

He is adamantly opposed to meds, so it sounds like a psychologist is the way to go. Thanks!

If you are searching out a therapist look for someone who specializes in anxiety disorders and if you speak to them on the phone ask what approach/techniques they use. Then I would look these up online with my DH and see if these are something he fits with. There are a lot of wonderful therapists and psychologists out there that deal with this without meds.
