I saw this while I was at the Mennonite Bulk Foods store and wondered what it was. It is very white and fine looking.

I read the blog but I still don't understand the origin of the term? Was Occident the name of a ****** who first produced it or a location where it was produced? Was this kind of flour developed by accident (accident/occident)?

The milling company. If you search for "occident flour" the majority of hits that come back are actually from collectors of the advertising paraphernalia (or pictures of the ads on the sides of buildings).
