I got this recipe for water kefir at the farm I buy my raw milk from, they swear by this method, and told me that the bottled water kefir they sell there is also made this way. I've had the water kefir from their store and it's great!
I was soo happy to get this recipe because I just haven't had the motivation to get grains online (I hate buying stuff online, and don't do it if I don't have to.)
Here's the recipe for 1 gallon of water kefir (you can cut the recipe in half if you don't want to make so much):
2 pouches of powder kefir starter, this is the same powder you use for milk kefir as well
1 cup honey or other sugar (I was told honey is prefered though)
6 oz of your prefered juice (they highly recommended lemon)
1 gallon of water
I was also told you can add grated ginger to it if you like ginger
Let sit 3 to 4 days in a warm spot. Make sure to make it in a glass jar, and I was told you can cover it with your containers regular lid, you don't have to put a towel over it like you do with kombucha. It was also recommended to me that if you want a bit more flavor, to add whatever juice to it that you want when you drink it.
To make more water kefir out of this recipe here is what you do. When it's done fermenting you save 2 cups of the kefir to make another gallon of water kefir. I was told you can save this "starter kefir" in the fridge up to a month. Another reason I like this recipe is because if I "kill" my starter it's easy for me to get more powder kefir starter, and I also plan on keeping a few extra packets in the fridge just incase.
