just wondering if anyone has a recipe for this as it was mentioned on my halloween food thread. sounded delicious and i'd love to try and make it.

I just made some that's dairy, corn, soy, gluten, etc. free. It was really good. But if you want a "normal" one, I won't post it.

It's corn free, gluten free, soy free, dairy free, cane sugar free, and who knows what else free.

2 c. palm sugar (could probably use white sugar)
1 c. maple syrup
1 Tbs. simple syrup (I haven't made a second batch to see if this is really necessary)
1 c. coconut milk
1 tsp. corn-free vanilla
1/8 tsp. sea salt
1 Tbs. palm shortening
1 c. chopped walnuts (optional)

Put sugar, maple syrup, simple syrup, coconut milk, and palm shortening in heavy saucepan with candy thermometer. Bring it up to 240F (soft ball stage). Let cool mostly. Put in mixer with vanilla and salt. Beat until creamy. Add nuts. Pour into 8x8 greased pan. Don't share with your family. Eat it all within 24 hours. Because you can. Oh wait. It should have stopped at the pan part.

I actually saw simple syrup for sale the other day, at Trader Joes I think. It's 2:1 sugar to water (I do 2 cups sugar to 1 cup water; I usually use palm sugar, but you can do it with any type of sugar). Heat (medium) until sugar is dissolved. Then boil about 3 minutes. Store in fridge. I use it for sweetening a lot of things where I don't want the granular feel of sugar.
