Maybe it's just my newbieness talking, but making a stock makes me constantly hungry! I'm making my first beef stock right now and all I can think about are swiss chard and filet mignon! I do have a couple frozen filets that I may have to bust out but arrrrg, no chard. I can't be eating like this everytime I make a stock! Do all of your get a hankering for food the whole time you are cooking a stock or is it just me?

The umami smell is driving me nuts!

I try to make stock in the crock pot overnight, so I'm not awake to be tempted!

Oh, I totally make it in the crockpot overnight, too! But I still wake up to use the potty and smell that wonderful chicken-y aroma and wish I was eating some yummy soup!

Sometimes I'll have some of the "not quite ready" broth in a cup. As long as the bones in there are fully cooked (either because I started with cooked bones or becuase it's simmered long enough), I figure it's safe to consume, even if it's not as tasty as it will be later.

I make stock about once a week and I've never had this happen. I might drink a glass of wine if it's during the evening, though. Usually I'm making stock AFTER dinner when the bones have been picked clean, so I'm already full.

I thought umami was a taste, not a smell.

I used to simmer my broth overnight in the slow cooker but I couldn't sleep because around 3am when it got really aromatic I would be dreaming about food : So now I do it on the stove during the day (most of the time) when I can nosh at will.

I make stock in the crockpot overnight and on a day that we're all out at work. That way when I wake in the morning and smell it, I can feel happy that breakfast is on its.

OTOH, I have a heck of a time reading this forum and not wanting to eat any and everything everyone's talking about!
