 I have a full jar of raw cream in my fridge and would like to make ice cream but all the recipes call for heavy cream. Is it possible to substitute heavy cream with regular cream with good results? Will adding butter to cream make it a good substitute for heavy cream?

You don't need to add butter.

 

You can cut back a little on the milk part, use more of the cream- many ice cream recipes call for cream & milk- Plenty of people make ice cream using just light cream, or half and half. If you are worried it won't be rich enough, do a cooked custard base and use plenty of egg yolks.

Or, if you have great eggs and you know the source and trust it, you can leave the yolks raw--no need to cook it.  Sweeten it with raw honey and you get even more nutritional goodness in there.


Crunchy check list:  2 homebirths (one accidental UC!), co-slept, no CIO, cloth diapers, home/un school, raw milk drinker (!) I am a walking cliche!! I even blog and knit...

i've made lots of ice cream with fresh raw cream skimmed off my milk and it has turned out wonderfully. good luck.

I don't mind using raw yolks at all smile.gif

How much egg yolks would you use for 3 cups of cream?

I would use 6  (you could use less, but it's nice!)  Make meringues out of the whites, or macaroons with coconut.   The raw yolks lend a good texture and make it enriched with nutritional benefits.  My kids eat ice cream like this and I feel like they're getting something that's very healthful for them.  Vanilla, chocolate, or?

I have never made ice cream before so just want to make sure,all I have to do is mix cream with yolks, add the desired ingredients and freeze it, right?

Joanna, if you just freeze it without an ice cram maker or otherwise somehow mixing it while it freezes it will freeze solid.

I don't have an ice cream maker, I'm planning on mixing it with handheld blender every 30 minutes until it's ready to eat.
