I bought an organic free range chicken at Trader Joes, which is currently in the oven. Inside the chicken was a bag that contained this:

Click to see a larger version.

What is it?

Is the left the liver?

Is the middle the neck?

The piece on the right might have been attached to the neck, or it might have just been stuck to it-- it fell off easily. So is it part of the neck or is it something else?

What can I put into the bone broth I'll be starting later tonight?

What can I put into gravy?

What would you recommend I do with the "stuff" that was in that bag?

TIA!!!

So, looks like livers to the left, neck in the middle and gizzards to the right.

You can use the neck and gizzards in the stock but the livers will make it taste funny.  We usually cook up the livers and throw them in some other dish (even if it's just chopping it up and throwing in some rice--but usually all liver in our house is added to meatloaf).

Yup, left to right is liver, neck and gizzard.  Doesn't look like they put the heart in there.

Neck goes in the stock.  Freeze the liver for pate.  Gizzard can be chopped up into little bits and put into dirty rice.
