I'm ordering bones along with my meat this year and need to figure out how many pounds to get. They're really good organic beef bones and I want to replace water/commercial stock with broth from now on. I have a family of 5 and would use 2-3 quarts a week at least. Thanks for your help!

I used 10 lbs of beef femur ends to make 30 quarts of broth.  All the broth gelled, but later batches didn't gel as well as the first.  I cooked the broth in my pressure canner, then pressure canned into quart jars.  I did leave 1-2" headspace because I didn't want my broth boiling out.  HTH!

 

Oh, I also got 2 pints of marrow/tallow to use for cooking.

Thanks, that helps! I was trying to go by multiplying a recipe but it ended up with like 60 lbs of bones! LOL

Oh, I wanted to add that I would cook a batch, drain off the broth, and then add more water to the same bones.
