i cant remember where i saw this the other day, but does anyone know of one?  i think the ingredients were canned sweet potato, can of coconut milk, vanilla, and honey?

 

im really bad at figuring out recipes off the cuff as far as amounts etc.  ive been salivating over something like this for days!  i hope someone knows something:)

Oh I make these all the time for breakfasts.  Here's my recipe:

 

1 ginormous sweet potato, roasted until very soft then peeled (yields me around 16-20 oz potato, but as long as you've got at least 14 oz you're good)

3 large eggs

1 can good coconut milk - the thicker the better, I usually use Arroy-D

good pinch salt

1-2 tbsp honey

pumpkin pie spice

 

Throw all the ingredients in the blender and whiz until smooth.  Pour into greased ramekins and bake at 300F in a water bath until just set (time will depend on the size of your ramekins)
