We really like our water kefir (dd#1 and I, dh refuses to even try it). I read on Dom's website that converted dairy grains do not propagate. So does this mean I would have to buy more when these "die"? Do they die? And is it obvious if the grains are not doing their thing anymore?

BTW, the first time dd#1 saw the water kefir brewing on the counter top and said: "is that compost tea?"

I read that about using milk Kefir grains to do 'aqua' ferments. It's because there is some component missing in the 'sugar water' ferment, that they are used to getting in the milk.

If you have only done a few ferments, you can probably stick a few back into milk and 'nurse' them strong....then you can use 'donor' milk Kefir grains occasionally to replace your water Kefir ferments.

I have no idea what a 'has been' Water Kefir grain, that used to be a 'milk Kefir grain' would look like. I guess if it isn't 'bubbly' and it smells bad, rather than nicely fermented, it's time to change them out!

I think I would just replace them every other batch, to be sure...but I'm paranoid about fermenting stuff and not growing things I don't want in there....

If you need some more grains...there are LOTS of mommas around here with milk grains to share now! I would like to get my hands on some 'water grains' that are specific to that purpose...maybe I'll contact the Dom and see about getting some for us all, and find out how fast they reproduce for 'sharing'.

The problem is, I don't make any "dairy" kefir (we're sensitive to dairy (even raw milk) and we just don't like goat milk that much). So I really cannot baby the kefir grains. I was trying to find out on Dom's site where to get water grains, but can't find it. If you find it, please let me know.
