I know there is the longest thread ever in the archive about kefir, but I really can't be here that long to read 14 pages! Besides, I've read first few pages (very briefly) and could find "recipe" for kefir itself. There is lots of fantastci recipes for stuff that has kefir in it,but I did not see anything for making kefir.

Can you please point me in the right direction?

You can either make kefir using starter grains that you get from the healthfood store (but these are only cultures and can't be reused very long, I don't think), or you can use live kefir grains. The live kefir grains reproduce and can be reused indefinitely. Someone on the mothering board who has extras can ship some to you for the cost of shipping. There's also an online database to find someone locally who can share kefir grains with you (try a google search). Hope that helps!

I forgot to mention that I will have the live kefir grains soon....i was wondering what is the next step.

NevI do have one more question - I just recieved the kefir grains in mail todat (thank you so much tofumama! ) - can I keep them in the fridge before I put them into milk? Or do I just keep them outside on a kitchen counter?

You can put them in a glass of milk or water (to rest) for a bit before you decide to really make it. When you do make it, just put abt a cup of milk in a glass jar, add the kefir then put lid on loosely. I say a cup of milk b/c you might want to start w/a small quantity. But if you have a big ol glob of kefir you might need more. Like if you have a tablespoon size amt you would need more milk. I figure tofumama sent you abt 1/2 - 1 tsp though.
It might take more than 24 hours to really get going the first few times. It's going to have to readjust itself after it's probably hot journey lol. It may be thin and watery at first - mine was. But after a bit you will see it kind of level out to a consistent thickness (if you let it do it's thing for the same amt of time everytime that is).

I always made smoothies w/mine. It seemed more yougurty tasting that way. Kefir, coconut milk, fruit, agave necter or rapadura. That easy. I would drink it shorty after I wake up, then have a small breakfast abt 30 min later.

This is the very condensed version. I'll go thru heathers post here in a bit to see if I can C&P her very complete instructions.
