Somehow soaking the flour to make bread just seems unnatural to me. Could I just make sourdough bread/biscuits, etc and skip the flour soaking?

I’m not sure I understand what you mean. How is soaking unnatural? Do you mean it’s uncommon in most modern recipes? I’ve only skimmed Nourishing Traditions in the library, but I’ve gathered that soaking grains is an important step in improving digestibility.

Yes! Of course! That would be the ideal anyway, to make everything with a sourdough starter (which you are soaking/fermenting the flour still anyway!).
Another alternative is sprouting.
