Ok the NT book says to soak for 12-24 hours. Barring intense weather conditions... how long can you leave it out to soak before you should not use it at all?

I only ask because I uh "forgot" about something I was soaking.

I would go by smell and appearance more than time.

I know with sprouting you let it soak, then rinse it once or twice a day. If something's been soaking a bit too long I'd probably drain it, rinse it, then cook it in fresh water.

I let beans so too long once..they smelled like sour was gross....

now beer..that would be yummy..hehe..

Depends on how long you actually left it, what it is, and what you soaked it with. If I remember correctly, you're supposed to change the water every 12-24 hours if you're not going to use it. I've noticed that when I add whey or a cultured product, it doesn't go bad even when I forget to change the water. It just starts to smell fermented. I love fermented stuff, so I recognize the smell well and really like it. If it smells good to you and not moldy, it should be fine although I agree you probably need to rinse it pretty well first.
