It is my first time brewing, I brewed one gallon of tea. the recipe I used called for a cup and a half of sugar. I have let it sit for 9 days now, and it still tasted really sweet to me, not tart and almost vinagery like the one I get at the store. Did the recipe call for too much sugar, or should I just let it sit longer?
I let mine sit for about 9 days and its perfect for me. I second letting it sit longer. I think the temperature also affects how long it takes. We had a really hot week 2 weeks ago, and the brew was a lot "tarter" than previous brews.
