It is my first time brewing, I brewed one gallon of tea. the recipe I used called for a cup and a half of sugar. I have let it sit for 9 days now, and it still tasted really sweet to me, not tart and almost vinagery like the one I get at the store. Did the recipe call for too much sugar, or should I just let it sit longer?

you can let it sit longer and it will get tarter....or you can try less sugar next time...but letting it sit longer should get your results.

I let mine sit for about 9 days and its perfect for me. I second letting it sit longer. I think the temperature also affects how long it takes. We had a really hot week 2 weeks ago, and the brew was a lot "tarter" than previous brews.

yes temp makes a big difference..in the winter here I have to let it sit for almost 3 weeks.
