I just asked an Amish woman this question, she has been using lard for a long time and told me that you would know by the smell. I have had mine for 1 1/2 years (I admit, I was a little nervous about using it). She thought mine might still be ok. (She said she thought it would last a really long time, like a couple years.) See how it smells!

I have a similar question. I'm thinking of buying a big bucket of lard, but it's too big for my freezer. The farmer said I could just leave the bucket outside all winter. The temperature here fluctuates between 0 degrees F and 50 degrees F all winter, so I'm not sure how that sort of temperature instability would affect the lard. Anyone know?

Also, what's a reasonable price to pay for local lard? This farmer is not certified organic, but he claims that all his animals are pastured. He has quoted me a price of $2.50 per pound of lard, which seems too expensive to me.

Thanks for any lard advice!

It's something like 1 year at room temperature and 2 years in the fridge, depending on actual temperature.
