I made fermented vegies over the weekend from the WF book and the brine has turned a milky color with white bubbles on top. I spooned off the bubbles but is the milky brine ok?

I tasted one if the green beans and it tasted slightly salty and the texture was fine. I washed off the plate and the weight like it says in the book.

Yup the milky colour is normal. If you let the jar sit undisturbed for some time, the brine will appear to clear, but as soon as you move it around it'll milkify again. I think it's actually a good sign. If your beans still taste predominantly salty they need to ferment longer.
