i wnat to make meat loaf tonight and can't find the perfect recipe- here's what I have to use;

1 lb grass fed ground beef
1 lb pastured ground pork
eggs
panko bread crumbs (i know not tf but whatever- what do you use that can substitute this? )
eggs
onions
bacon? (my grandmother put this ontop her meatloaf, i wish i had her recipe)
chicken broth
tomatoe paste and ketchup

would you cook the onions prior to putting it in the oven? what are your techniques fro making the perfect meat loaf?

my husband's version is simple, but you have to let it "set" for about 10-15 mintues before serving.

ground meat
milk
whole egg
salsa flavor of choice

bake.

Mine is:

1 lb beef
1 egg
breadcrumbs
lots of spices
ketchup

Just mix it up and put more ketchup on top. I'll sometimes add onions too and some pureed veggies.

Here's mine:

1 lb beef
block of cheese
panko
salt
pepper
parsley
onion
garlic
oregano (just a pinch)
basil (another pinch)
thyme (another pinch)
tomato sauce

Work the beef, panko, and seasonings together. Build it around the cheese to make a loaf, and top with tomato sauce.

2 happy kids makes for a happy mother.

2lbs ground meat
1 carrot, finely diced
1 onion, finely diced
1/2 cup mushrooms, finely diced
2 cloves garlic
2 eggs
breadcrumbs
salt
pepper
parsley

Saute the carrot, onion, mushroom, and garlic til tender. Add them to the groud meat. Add the eggs, breadcrumbs and salt n' pepper. Not TF, but we top ours w/ a mixture of ketchup and hot sauce. Bake at 400 for an hour or so.

If you put the sauce on when you bake it, it'll get a nice crunchy crust on it, so yummy!!

Holy cow, I tried the NT meatloaf recipe and it was SOOOO good. I won't quote it here. It involves cream.

We love this recipe. I'm eating it right now!
I always use 2 different kinds of meat in a loaf - it works out best that way. My variation on the Moroccan tonight has lamb and Italian pork sausage. Sausage is a great addition to any meatloaf. I also love putting in veggies so DH gets stealth veggies for dinner.

Yes, cook the onions before putting it in the loaf, otherwise the onion doesn't cook all the way through. I cook all the veggies together before it goes into the loaf. Time consuming, but worth it.

Don't forget the egg! - I forgot the egg tonight and it's not quite a loaf when it hits the plate - it's a crumble. But VERY yummy!

DS, 10/07. Allergies: peanut, egg, wheat. We've added dairy back in. And taken it back out again. It causes sandpaper skin with itchy patches and thrashing during sleep. Due w/ #2 late April, 2012.

I saute up some onion, bell pepper, garlic, let cool, add to meat, an egg, bread crumbs (usually fresh, soaked in milk or cream), fresh parsley....I think that's it. Oh, salt and pepper. I like to do the top with roasted parsnip puree too

ooh, parsnip puree sounds good.

Too bad my previous favorite meatloaf (made with--wait for it---Ritz crackers and hidden valley ranch dressing mix) is so horribly prefab.

I've done meatloaf with oatmeal in place of the crumbs and that works great. I think it's a 50's Diner thing. Soaked oats I think would work well too.

well i went with a similar version to this-

except i didnt have parsley so i sauteed onions with garlic and some rainbow chard that was about to wilt.
and i didnt have red wine so i soaked it with some milk and some chicken broth, oh yeah and i substituted panko for the bread... so actually i didnt follow the recipe at all, lol.

oh and i put bacon on top and served it all with roasted buternut squash topped with butter and brown sugar.

it was so good!
