We're going to a picnic next Sunday and the main course is fried chicken from Albertsons. I don't particularly want to eat it and I certainly don't want DD to eat it. So...I need suggestions for a side dish I can make that can double as a main dish for DD and I. I'm open to any ideas, but it would be great if they didn't contain wheat, dairy, eggs, or nuts since DD is intolerant to all of these. I can usually substitute dairy out pretty easily, though, and nuts too...anyhow, fire away with ideas please!

We usually make this black bean/sweet potato salad, it is great for picnics. You could add some shredded/cubed chicken if you want.
Here is what I use to make it:
In large bowl combine:
3 cups black beans
2 large sweet potatoes, cubed, cooked (I steam them)
Corn kernels from 2 ears (about 1 cup)
1 red bell pepper, diced (You can roast and then chop for extra sweetness!)
Bunch of scallions or chives, chopped
Bunch cilantro, chopped
1 red onion, diced

In small bowl, whisk dressing, toss with above:
juice and zest of one lime
1 Tb olive oil
2 Tb rice vinegar
2 Tb honey
*1 ts adobo sauce from can of chipotles in adobo
(You can omit or increase this depending on how much heat you like)
1 chipotle from same can, diced
salt and pepper to taste

That's pretty much it. I vary it with what I have in the kitchen. I like the heat from the adobo balanced with the sweet potatoes and black beans, but it might be too much for little kids. Maybe make DD a side bowl without the adobo? This dish is always a hit and it travels well since it has no mayo or anything. Good luck!

I was gonna say black bean salad. I made it for a party the other day. Mix beans, rice, and veggies and toss with salsa. Yum.
