I just bought org local carrots with the greens attached still. There is more greens than carrot, and I don't want to waste the greens. What can I do with them?

Our bunnies love them. My step-father uses them for soup.

I toss them in with the other veggie scraps and bones when I make soup.

So I stuck it in with my beef broth, and it turned it very green,, I hope it is safe to eat. I will write back if I get sick, or won't write if I die.

The woman who runs my CSA uses them in place of fresh parsley. I think you'll live.

DS, 10/07. Allergies: peanut, egg, wheat. We've added dairy back in. And taken it back out again. It causes sandpaper skin with itchy patches and thrashing during sleep. Due w/ #2 late April, 2012.

I found a great soup recipe recently that uses carrot tops! It's pretty easy to make TF friendly.

Carrot Top Soup

Mama to Munchkin  and Chickadee ...and co-parent to 3 additional bundles of energy!

I had heard that they can cause reactions in sensitive people. Skin issues and increased sensitivity to sunlight I believe.

I've also read that they may be "allergenic" only to individual folks, not "toxic" to all. It seems that raw carrot greens are more of the concern, from what I read.
