Oh, I'm going to get flamed for this, but I've used tofu as much as 3 weeks past the package date. I've also chucked tofu a few days before its use-by or sell-by date.
It smells rank when it goes bad, and it also "puffs up" the top of the package with gas. So if the top of the package is normal and it smells ok, I'll use it (cooked), and I've never had a problem resulting from that.
