DSD loves polenta (the soft kind), but I am often at a loss as what to pair with it. Any ideas would be appreciated. We are vegan. TIA!

I usually saute up some mushrooms and artichokes (and parmesan cheese, but you could use a vegan version) and then I serve it with Spaghetti and tomato sauce. I put it in the oven so the flavor gets incorporated. This is one of my meat loving husbands favorite meal and it is so easy too.

my kids love it with fruit and honey on top.

I wish I could say that I made it from scratch but I buy it in a tube from Trader Joes for like $2 or at least I used to when I lived near one. That is one of the reasons it is such a quick meal for us - like 5 minutes prep which as you know is pretty impressive for veg food.

We buy the Bob's Red Mill polenta and it takes less than 10 min from start to finish to make it from "scratch." That's part of the reason that I need ideas for it - it is so fast!

These ideas are great - keep 'em coming!

I make a polenta pie that my extended (omni) family asks for ALL the time- cooked polenta, 2 chopped tomatoes (save some for topping), steamed broccoli(cut up a good bit), a bit of Vegan parm cheese. Bake for about 45 minutes at 350* I think (I'm at work and the recipe is @ home)...

It's so easy and tastes soo good!!

White beans in a tomato sauce. (Just cook the beans, add a container of chopped tomatoes, maybe some italian herbs, simmer a bit.)

Sauteed greens go with that really well, too.

I like it fried with maple syrup on top, too.

From scratch topped with tomatoes and olive oil and served with black beans and sauted spinach. Freaking DELISH. :
