Hi mamas,

I'm starting full-time university courses and in addition to being really busy with school and a toddler, I'm also gonna be on a tight budget. Clif bars were on sale the past couple weeks (perhaps because of the PB scare? lol) and so I have been having one most every weekday. I'd prefer to just make up a big batch of something like that on the weekend for the week, so I was wondering if anyone has some tested and true recipes? Something that would appeal to my toddler would be great, too.

I've never tried recreating a clif bar, but I love making fruit and nut snacks a al larabars. Just toss some dates and any combo of nuts, seeds and/or dried fruits in a food processor then roll 'em into balls. Easy and delicious!
