I thought since it was the second day of the month that we should have an April thread.

Last night we had crazy delicious vegan mac and cheese, baked beans and roasted broccoli.

The Mac & Cheese recipe I got from a recipe packet from Compassionate Cooks (the Southern Comfort packet) but it's also in the Real Food Daily cookbook. It's soooo good, sooo creamy! My mom, who is a mac & cheese hater, absolutely loved it and demanded that I make a batch of the cheese to leave with her before I leave this weekend!

Oh - vegan mac n cheese sounds good. I need to make up a batch of that - my kiddos love that, and we haven't had it in a while.

Last night we had gf blueberry muffins, Marilu Henner's spicy soba noodles, and mixed veggies.

Maybe I should crack open my Real Food Daily cookbook. I think I've only made one thing from that book. We eat at the restaurant sometimes when we visit my daughter. It's great. We've even spotted semi-celebrities at the West Hollywood location.

Last night was borlotti beans in a tomato-fennel sauce over polenta. We had French bread too. My 13 year old ds was so cute. He asked for olive oil and balsamic vinegar to dip his bread in. I made pudding for him for dessert to try to get some more calories in before bedtime. I swear he grows an inch every night but never puts on a pound.

Tonight will be bean tostadas with avocado and fresh salsa.

Every vegan mac and cheese i've tried to make has been a big fat NO with the kids . Though I guess I'm glad they don't really even like the regular kind with cheese.

Keeta I've been smearing miso and garlic on bread like every night since you posted that. I'm attempting to eat raw this whole month but I decided this morning that night time will just not work. I'm cranky and hungry and my kids are annoyed when I do'nt eat what they do. I'm doing a 3 day cleanse so I'll be drooling but after that I'm gonig to live in the kitchen and eat lol

Tonight I'm making the miso garlic bread (I made baguettes last night) and whatever shape pasta the kids pick out with an italian sauce

Wow, I forgot it is April already

DS1 has started soccer so we are doing quick meals on Wed & thursdays for a while. Last night was bean tostadas for DH & I. Cheese quesadillas for the boys. My boys don't like beans, or so I thought. DS2 asked what I was eating so I offered him some & he LOVED it : YAY! I have atlease a refried bean eater. I am overjoyed!!!

Tonight will be cheese tortillini for TJs with asparagus & salad.

yum tostadas sound so good right now.

tonight we will be having chickpea-oat burgers with marinated cucumbers, homemade potato chips, and pineapple slices.

tonight we are having poorjee (pakistani spinach and potatoes) and roti.

I got a little fancy for the 1st, and made a truffled cauliflower dish (from Great Chefs Cook Vegan) and some polenta with sun dried tomato pesto and olives.
The cauliflower dish wasn't bad, but my palate must not be that great yet, because I don't think I like the taste of truffle oil very much. The polenta with pesto was great, though.

I'm reading all of these menu ideas and am fairly overwhelmed. Where can a single dad start? I work just like everyone else and want my time with my girls so I need to find meals that are fairly quick so I can get them through the homework and we can spend time watching the WHEEL or just having fun. That leaves.....Spagahetti? Any resources?

Vegan Express by Nava Atlas is great. Any of her cookbooks have quick, family friendly recipes and some have meal plans.

I am on a 3 week Spring break from work right now so I've spent a lot of time in the kitchen. You won't find me posting too many interesting meals once I get back to work.

Pinto bean and cheese enchiladas with salad and avocados. Organic strawberries are everywhere these days in Europe so we are having Arugula with Straberries and Balsamic vinagrette almost every night.

Earlier in the week I tried to make a Middle Eastern COuscous dish in my crock pot- but it came out too mushy. I adapted it from Real Food for Healthy Kids--not veg but a good cookbook.

YAY April!!!

We aso had vegan mac and cheese, today, not yesterday. I don't use a regular recipe, I admit, but it is something the kids love, so...there ya go! I use rice shreddies, rice milk, a bit of vegan parm, salt, a tad of nut yeast, and then depending on how we feel, touch it up the way we like it. Brags, a lot of the time.

Anyway, tomorrow I think I'm going to put together a nice vegn lasagne, and on the weekend a chickpea and spinach curry, and some potato leek soup. Otherwise, it's just whatever is left in the fridge, for the lot of us!

Tonight was a mexican fiesta - some Mexican rice and some tasty pinto beans that I threw some spices in and served with a little cashew cheese drizzle inside corn tortillas. YUM.

I just have this week planned currently.

Friday-Homemade pizza, broccoli and chickpea salad (this salad is going to make a good potluck option too)

Saturday-Sweet potato and black bean quesadillas

Sunday-Honey lemon mock chicken over rice

Monday-Peas and red onion pasta

Tuesday-Tomato soup or pea soup and grilled cheese

Wednesday-Penne pasta with mock meat sauce and rolls

Thursday-Visiting friends

Friday-Veggie Chili

Happy with my DH, 2 kids, dog, fish, and frogs

Last night was refried beans/ancient grain wraps w lettuce tomato onions peppers corn and salsa. YUM

Tonight was miso soup...since ds is gone for the night and dh had to go to a gig, I ate the leftover soup frm lunch and then a huge salad..still in a rut!

I got up this morning and made tonight's gazpacho. That really cleaned out the vegetable drawer. I'm going to do some freezer cooking today - Mexican vegetables (from Moosewood Cooks for a Crowd) and mushroom-barley casserole.

You guys are so motivating!!

Tonight I made simple rice and beans with sauteed onions. My son ate TONS of them, which is awesome! He's been on a really weird eating jag. As a treat I made organic tater tots for him after a bowl full of r/b. Mmmm - a treat for us both lol!

Tomorrow? Not entirely sure, other than leftovers...

I bought some great looking cauliflower. All I have ever done with cauliflower is put it in curries. I'd like to try something new now . I saw an interesting mashed "potato" recipe with cauliflower, but I am not convinced yet. Any better ideas?

i like those mashed "potato" cauliflower recipes a lot, but my husband thinks they're kind of "meh." we both love this recipe though:

roasted cauliflower with a tahini-lemon sauce

tonight i'm thinking paella.

I have jerk tofu in the oven right now. I'm also fixing garlic-saffron rice (from VCON) and steamed green beans. The tofu smells so good.

I still read this thread faithfully, although I hardly ever post. My all-day sickness (who coined the term "morning sickness!!") is seemingly subsiding and I'm hoping to get back into cooking. *fingers crossed*

Last night we had spaghetti and peas

Tonight we had waffles with sauteed apples and bananas on top, and Morningstar sausages.

We had black bean and sweet potato wraps. Yummy! It's nice because I can just put it all on the table and everybody makes them to their own preferences. I think it was about a $7 meal for 4 including dessert and drinks too, which is good for us being in a high COL area.

We went for steamed cauliflower with "cheese" sauce in the end - was nice. And today for lunch - grilled eggplant with greek salad, very nice!

You take one eggplant and grill it in the oven for about an hour, cut it open, and put feta cheese and tomato salad, with a garlic/balsamic dressing on it, and salt and pepper to taste. Add some fresh bread, and you have a very nice meal!

Last night's tofu was great. I love that garlic-saffron rice recipe too.

Tonight we'll have leftover gazpacho and garlic toast. I promised ds a trip to the beach later this afternoon.
