Vegetarian and Vegan > stuffed peppers

I want to make some stuffed peppers but I really don't know what to stuff them with. My mom used to make a ground beef & rice mixture with tomato sauce. I was thinking I could do something like that but use TVP, lentils or chopped up veggie patties. Does anyone have an actual recipe they really like or tried & true method.

You can replace the meat with lentils, or smart ground, in just about any recipe. I can't find an online version of the recipe I usually use, but it is the one from the Vegetarian Meat and Potatoes cookbook called Stuffed Peppers over Potatoes.

I make a mixture of mashed chickpeas, cooked rice, and onions with what ever seasonings I have laying around and I cook them in a tomato sacue.

I make a stuffing out of cooked leftover rice and celery and carrots and apples and dates- whatever I have on hand really

I make a mixture of cooked brown rice, cooked red lentils, finely diced carrots, onions and garlic, which I sautee all together, then mix with shredded cheese stuff, top with more shredded cheese and bake for about 20-25 minutes, but if you are vegan you can totally leave out the cheese or use a good vegan cheese.

I use carrot, celery and onion finely diced, one can tomatoes with green chilis, wild rice mixture and mushrooms. For spices, I uses epazote and good cracked pepper & salt.

mushroom, buckwheat and french lentils is fabulous in peppers.

it sounds weirdo, but we saute tofu with soy sauce and peanut butter and then mix in whatever chopped veggies we have with chili powder and salsa, then stuff and bake. It is so yummy!!
