My fibromyalgia has been suuuuuuuuper out of control lately. Really really bad, so I am trying desperately to go GF again and really focus on nutrition. I've managed to be 100% GF for the past three days and it's actually not as painful as I recalled it being last time, maybe this time I can stick to it, KWIM?

So anyway, for tonight I made a really simple yummy pasta salad.
It has pasta, avocado, sour cream, curry powder, pineapple and raisins ( and salt and pepper to taste). Incredibly easy and tasty.

Tomorrow I am doing steamed asparagus and green beans, mashed potatoes, deviled eggs and maybe GF rolls if I have everything I need to make them.
Forgot to add that I have a tube of premade polenta in the fridge that I'd really like to use before it gets bad. Not sure what to do with it though.....any ideas?

tofu fish sticks
white bean and kale soup
broccoli and noodles with cashew alfredo
peanut butter noodles

And last night we had Papa Murphy's pizza with Daiya. Mmmm.

I just made a simple tofu-broccoli stir-fry last night, but it was really tasty.

All I ever do with it is slice it up, lightly brown the slices on the grill or under the broiler, then serve it with some pasta sauce.

Tonight we are having store bought green chille tomales, salad with my homemade italian herb dressing and roasted beets. I have been soooo not into meal planning lately.

Slice it into rounds and lightly "fry/sautee" it in olive oil. I like to also sautee some red onions, zucchini, diced tomatoes, green peppers, and a little bit of salt and balsamic vinegar and put that on top. You can add beans, too...chickpeas or cannelini. It's so good!

I usually slice it and layer sliced roasted eggplant/zukes and tomato sauce with pine nuts

Last night MIL made Easter dinner(she was determined and we were terrified), she made us a potato carrot dish, a greenbean almond salad, stuffed potabello mushrooms and a tofu dish all dairy free and beyond yummy! We were floored..then she showed us the new vegetarian cookbook she bought, she's so proud!

Tonight I made jasmine rice w apricots, peas, sesame oil and pistachios And a stirfry with chickpeas, kale,lemon juice and chili flakes. Cuke slices too, very springy and very yummy!

I am newly vegan and just finishing phasing out dairy ... finishing w/ fresh mozzerella. And then that's it! I've been vegetarian for some time now with minimal dairy, but am committed to going vegan all the way, and mostly raw.

So lately it's been a lot of raw fruit, big raw salads for lunch with tomatoes, celery, olive oil and Bratt's apple cider vinegar, veggie nutritional yeast ...

For dinner I made a soup with organic veggie broth/ and broth from the seeping veggies. Cabbage, carrots, celery. Tomorrow I think I may add red skinned potatoes and more broth, and let it seep.

Also phasing out all sugars (except my local honey and the fruit) ... going pretty well. The next few days will likely be more difficult.

SO HAPPY WITH THIS WEATHER!! It helps sooo much.

White bean and kale soup:

Cook 1-2 cups of white beans in a crock pot all day. Add 1/2 teaspoon salt and the juice of half a lemon for each cup of dry beans. Chop a goodsized bunch of kale and add to crockpot, pouring boiling water over it if needed because the beans have cooked off too much water. Add a teaspoon of dried sage, and a couple of cloves of minced garlic, and stir. Serve once the kale is wilted.

Pineapple tacos- is black bean tacos with homemade pineapple salsa and whatever trimmings seem right. I did a lime-infused cashew cream, lettuce, toasted pumpkin seeds and avocado.

The pantry mole sauce from Vegan Brunch (Search it on Google Books if you don't have the cookbook) is what I use with the enchilada casserole - just cook up some beans and steam diced sweet potatoes, then layer it into a pan lasange style using tortillas as your "noodles." Bake until hot and bubbly.

Peanut butter noodles is my lazy-day dinner. Just a bunch of veggies and whole wheat pasta with a sauce made of peanut butter, hot sauce, soy sauce, vinegar or mirin and sugar.

Tonight was "green soup" Ds wanted green soup so I pureed kale, peas and broth. Then added a chopped potato, peas, a carrot and leftover chickpeas and spices. We had it with lentil loaf, wasabi mashed potatoes, mushroom gravy and a plate of cukes, tomatoes, carrot sticks and olives

Wed we had macaroni and "cheeze" using a nutritional yeast sauce. With corn and sliced veggies

Thurs I made a stirfry type dish w the leftover lentils, kale stems, fresh parsley garlic, tumeric, frozen okra, black olives and corn, a tomato and orange zest/juice. Quite ummy. Dh said a little too much orange zest

Fri we had friends over for a late dinner. Ds and I made a rapini salad w pear cuke green onion(wanted red but they were mushy at the store ) with a slice of strawberry on top and a lemon olive oil dressing. And roasted garlic walnut sauce on spelt noodles with basil and black olives on top

Tonight was leftovers

Did the polenta tonight. Sliced it and fried it in olive oil and then topped it with mozarella and spaghetti sauce. Soooooooo yummy!!!!!

Use a fair amount of oil and youll do great! One of my fave meals


Today I made broth, so we had "asian" night. Dh made a yummy sesame oil soup w mushrooms, beansprouts, garlic, ginger ect. I made homemade tofu 5 spice dumplings and cold spring rolls and we had frozen spring rolls and steamed rice

ekk. I didn't really make a recipe but I'll try

-half a brick of tofu
-tons of garlic/ginger
-corriander seeds
-fresh cilantro
-a little green onion
-a little diced carrot
-a litle bit of whatever greens you have on hand.
-a small sprinkling of Chinese 5 spice powder

I just blended everything until smooth and then stuffed the wrappers BUT it was way to spicy for the little ones so I should have sauteed the spices before. I love dumplings b/c I use tofu or cooked white beans as a base and I can spice them/cook them however. I use the wonton wrappers for ravioli as well...which will be later this week with the leftover wrappers

I made lots of stuff today. I don't like to cook usually so this is strange for me, but I made 4 different things today I've never made before. The best part is it all turned out great.

Black bean soup for lunch (no recipe just threw it together)
Pear sauce (again no recipe)
Asparagus quiche with brown rice crust (Vegetarian Mother's cookbook)
Multigrain raisin muffins (The Vegetarian Gourmet's Easy Low-Fat Favorites)
