I have 3 birthdays comming up in a row and I was wondering if anyone had any great vegan cake recipes they could share? Thanks a bunch!

Dh just made the most amazing vegan carrot cake w/ coconut frosting for my birthday a couple of days ago Given the option, I would eat nothing but this cake for the rest of my life It's from the cookbook 'Vegan with a Vengeance'

I second VWAV! I love the coconut cupcakes and that coconut frosting is the most awesome thing ever. Just don't put it in the fridge. It gets too hard to frost and you won't be able to stop yourself from eating it with a spoon.

I've got the cupcake one on hold from the library. I hope it gets here, soon.

I third the Vegan Cupcakes Take Over the World! My stepmom bought it, I "borrowed" it for so long that she just ordered herself a new copy. My favorite were the lychee cupcakes, soooo amazing.

I LOVE Isa's cupcakes and cakes! I have most of her cookbooks, including Vegan Cupcakes Take Over the World, and have had a lot of success with almost everything (though I tend to take her recipes and change them a tiny bit due to allergies).

I even have a few photos in my album if anyone's interested

VegWeb has a ton of recipes too if you're not looking to purchase anything, and post punk kitchen is Isa's website (which has a nice gathering of recipes and reviews).

If you want to try out some Isa recipes before buying anything, here's some cookie recipes, as well as cake recipes submitted by other vegans or by Isa herself.

Dreena Burton also has sample recipes you could browse through for cakes.

I have been searching for the same thing for my daughter's birthday...my problem isn't so much the cake part, but the frosting. I have tried a few different vegan frostings and they tasted horrible.

Yah! They have frosting recipes that are insane, too.

There's a recipe here in Peggy's Kitchen for an Applesauce Cake that I've made a ton over the years. It's vegan and awesome.

i just made this vegan carrot cake (w/ vegan vanilla buttercream frosting) for my daughter's birthday. it was outrageously good... no one could believe they were vegan.

here's the grit vegan buttercream frosting recipe (it's over the top):

1 c. vegan marg (softened)
2 1-lb. boxes of powdered confectioner's sugar
1 tsp. vanilla extract
2-3 tbsp soymilk or water

cream the margarine then add the sugar cup by cup, mixing as you go. then add vanilla, and the soy milk or water (you can add more liquid if it's too thick).

These are gluten free egg free dairy free nut free soy free and yummy!

1 cup oat flour
1/2 cup either buckwheat flour or amaranth flour
(buckwheat does not contain wheat)
1/2 cup brown rice flour
1/2 tsp baking soda
1 tsp baking powder
Mix.

In separate bowl, mix:
1 - 15 oz can pumpkin puree, seasoned
1/4 cup oil
1/4 cup honey or maple syrup
1/4 cup molasses or agave

Add dry to wet. Mix. Bake in lined cupcake pan. 375. Approx 25-35 min.
Check at 25 minutes.

YUMMY!
