It is hard to choose one but a meal that we have all really liked is...we call it The Potato Broccoli Thing...

Bake a potato (one for each person), cut it in half and chop up the inside with butter and salt and pepper, like a regular baked potato
spread steamed broccoli over the potato
Sprinkle shredded cheese (we use cheddar or monterey jack) over the top and pop in back in the oven for a few minutes so it will melt
put ranch dressing over it and serve.

I can't wait to see others!

Nori Rolls with Tahini Sauce and Miso Soup

Make nori rolls with brown rice, stuffed with dill pickle, umeboshi plum paste, avocado, and carrot. Tofu optional.

Tahini sauce is easy- whiz whatever herbs you like with garlic and salt and pepper in the food processor with tahini and olive oil. This is for dipping the nori rolls.

Miso soup- Hot water, miso, tofu if desired, whatever veggies you like.

It's so hard to pick just one, but this one's my signature:

Penne with Spinach and Beans


3 cups penne
Olive oil
~2 cloves garlic, minced
1 can canellini beans, drained and rinsed
~6 oz fresh baby spinach
Red pepper flakes
Salt and pepper to taste


Cook penne according to package directions.

While penne is cooking, heat garlic in olive oil in a large skillet. As soon as you can smell the garlic, add the beans. Add some salt and red pepper flakes and stir around a bit. After a few minutes, begin adding spinach, a handful at a time, allowing each layer to wilt before the next addition, stirring fairly constantly. When the penne is done, drain and return to pan, then add the spinach/bean mixture and stir to combine. If it seems dry, add some more olive oil or reserved pasta water. Add salt and pepper to taste. You can add some cheese too (parmesan or asiago work well) but I usually keep it vegan. Stirring around the beans while sauteeing tends to break them up a bit, giving it an almost creamy texture.

Hands down it has to be my Vegan Baked Ziti. It looks and tastes just like the real thing. The Vegan Mozzarella cheese stretches... My omnivore friends are floored when I tell them that this dish is dairy free. Bon Appetit! -Jennifer



This is the "Best Marinara Sauce" recipe from Allrecipies. com:

2 (14.5 ounce) cans stewed tomatoes
1 (6 ounce) can tomato paste
4 tablespoons chopped fresh parsley
1 clove garlic, minced
1 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon ground black pepper
6 tablespoons olive oil
1/3 cup finely diced onion
1/2 cup white wine


In a food processor place Italian tomatoes, tomato paste, chopped parsley, minced garlic, oregano, salt, and pepper. Blend until smooth.
In a large skillet over medium heat saute the finely chopped onion in olive oil for 2 minutes. Add the blended tomato sauce and white wine.
Simmer for 30 minutes, stirring occasionally.

"Ricotta Cheese"

1 14oz package of Extra Firm Tofu
1 Tbs of Lemon Juice
Salt to taste

Drain Tofu, place in bowl. Wash hands and squish Tofu with hands until it appears to have the consistency of ricotta cheese, or you can just put it in the food processor and pulse a few times until you the the ricotta cheese consistency, then empty contents in to a bowl. Add lemon juice and salt to taste.


1 13 oz box of Ziti prepared per directions on box. (I use Dreamfields)

"Mozzarella Cheese"

1 package of Daiya Vegan Cheese - Mozzarella Style
(Personally, I prefer the consistency of Galaxy Nutritional Foods "Veggie Shreds" Mozzarella, but it does contain Casein, which does contain trace amounts of lactose. The Daiya brand is completely Vegan)


Preheat Oven 350 degrees F/177 degrees C
In a large bowl, combine cooked pasta, sauce and "ricotta cheese".
Empty contents of bowl in 9x13 pan
Cover with "mozzarella cheese"
Cover pan with lid or foil
Bake for 30 minutes or until "mozzarella cheese" is melted, then remove cover and bake another 5 min or until "mozzarella cheese" is lightly browned.
