I ended up making green chili enchiladas last night and a big pot of rice. There is one tiny piece of enchiladas left. The 13 x9 pan was so full it almost bubbled over. We eat so much now. I have to make two pans of lasagna usually.

I have enough rice leftover that I am making rice pudding. I love that. I love when something from last night stretches into today.

I love rice pudding!  And leftovers. There are still only two eaters here (DS hardly eats any solid food still) so a 9x13 pan of lasagna or enchilada makes two meals--or one dinner and two lunches for me. 

 

Thursday night we had an Asian inspired salad with Napa cabbage, spinach, green onion, red bell pepper, sesame seeds and baked tofu.

 

Last night I made sauteed chard, roasted potatoes, and "sausage". 

 

After a super nice warm spell (gotta love NorCal!), it has cooled off again here so I think a soup will be made this weekend. . .just need to decide what soup.

Ooh.. rice pudding! I should make some too, I've got quite a bit of leftover of brown rice. I'll have to google for a good recipe -unless one of you girls have one that you use over and over? orngbiggrin.gif

 

Ok, this week is looking as follows -though it might be losely changed here and there as DH is feeling sick w/cold now so his appetite is gone..

 

Mo: Pasta Fagioli

Tue: Split Pea Soup *defrosted*

Wed: Black Bean & Sweet Potato Casserole/Enchilada (not sure yet how they're gonna be! *lol*)

Thurs: Onion & Cheese Pierogies ? [it's DD's b-day, we might switch with Friday's dinner]

Fri: Home made Pizza

Sat.: ? DD's b-day party, might only nibble here and there on veggies etc. but no actual dinner

We have sickies here too. it is mostly ds, but for not quite two year old, he puts away some food.

 

tentative menu.

 

mini fritatas with csa veg

red lentil coconut soup & oat soda bread

freezer chili over baked potato

miso soup and fried rice or egg drop soup and sushi salad or both

polenta pizza

mexican pizza

green chile stew.

jldumm--Green chile stew!  Oh how I miss that. . .I grew up in NM. Just been in NorCal for the past 4 years and you cannot find green chile here. Really. Or what you can find just tastes like bell peppers.  Sigh.  So, I have to make do with eating a ton when I visit and sneaking a few jars of green chile sauce in my suitcase. :)

 

Last night---sloppy joes. MAde with lentils and brown rice, yummy, and I just had the leftovers for lunch.

 

Tonight---skillet mole pie with greens from V'con

 

Tuesday--vegan cream of broccoli soup 

 

Wed--we'll see what the CSA brings for the rest of the weeks menu.

oh! I too would love a rice pudding recipe that is tried and true! I LOVE rice pudding :)

I'm not sure I have a tried and true recipe, but I have adapted this one with good results: http://www.foodnetwork.com/recipes/giada-de-laurentiis/lemon-and-almond-rice-pudding-recipe/index.html  I like to use coconut milk or almond milk.
